Wheat germ oil was extracted by supercritical carbon dioxide. The effects of different processing condition on the rate of extraction, the content of vitamin E and the component of fatty acid were studied with emphasis. The rate of extraction increased with the increasing of extracting pressure, separating of temperature and the flow rate of carbon dioxide. When the extracting pressure was low, the rate of extraction decreased with the raise of temperature, when the extracting pressure was high, the case was just opposite, but it was not obvious. The higher separating of pressure was, the lower the rate of extraction was. Temperature was the primary factor that affected the content of vitamin E primarily, and then the separating of pressure .In the process about supercritical carbon dioxide extraction of oil from wheat germ, the processing condition didn't show close relationship with the component of fatty acid.
