The purpose of this study is to evaluate the sustained release features of Nisin nanoparticles-loaded chitosan-starch compound films. Chitosan nanoparticles (CNP) were prepared by ionic cross-linking method, and Nisin-loaded nanoparticles were prepared by electrostatic interactions. The bacteriostatic ability and structure characterization were studied at the same time. Results:The optimal preparation conditions for Nisin-loaded chitosan nanoparticles were:pH5.6, the lmg/mL TPP volume is 20mL, concentration of Nisin is 1.8 mg/mL. The particle size analysis and Zeta potential analysis results showed that, gain particle size was uniform, and had good dispersibility, Nisin successful adsorption onto the surface of the chitosan nanoparticles, at the same time FT-IR analysis results also confirmed this conclusion. Chitosan nanoparticles loaded Nisin has good sustained-release effect.It has certain inhibitory effect against S.aureus.Chitosan nanoparticles loading Nisin were added to chitosan-starch film forming dispersions to develop sustained release antimicrobial film, the structure was characterized and antibacterial performance was studied. Scanning electron microscopy (SEM) results show that chitosan nanoparticles as certain compatibility the chitosan-starch film, the tensile strength of composite film is lower than that of blank film slightly, FT-IR results show that chitosan nanoparticles and starch liquid membrane mainly is the combination of physical function.
