Sub-health people become more and more because of the accelerated tempo of life and strong work stress. For the multiple healthy benefits, Gynostemma is increasingly favored by the vast number of consumers. Therefore, the researchers have paid more and more attention to the deep research and development of functional components of Gynostemma, especially the main efficacy gypenosides. Based on domestic pioneered Gynostemma oral liquid by the Findshe Co. Ltd., this study developed a new kind of effectively technology to improve gypenosides yield. At the same time, Gynostemma oral liquid reached the requirements of commercial sterilization by adding natural preservatives which were not worried by consumers.This study aimed to develop a new extraction technology of gypenosides and new preservation solution in order to solve the key technical problems in Gynostemma oral liquor industry, the main research results are as follows:(1) The best ratio of compound wall-broking enzyme was settled. After test, response surface optimization to get the optimum proportioning ratio of composite enzyme enzymatic disruption of Gynostemma:pectinase dosage was 0.4%, hemicellulase dosage was 0.5% cellulase dosage was 0.5%, the best quality proportion of compound enzyme was 4:5:5.(2) A new technology of microwave assisted compound enzyme to prepare Gynostemma oral liquid was developed. Compared with the extraction technology of Findshe, the gypenosides yield increased by two times using the new technology. Optimized solutions were as follows:the ratio of liquid to solid was 1:30g/mL enzyme dosage was 1.8%, reaction temperature was 52 ℃, hydrolysis pH was 4.8, hydrolysis time was 2h, microwave time was 4min, the yield was 7.88%.(3) The scheme of Gynostemma oral liquid Preservation with compound natural preservatives was settled. The scheme of Gynostemma oral liquid Preservation with compound natural preservatives was as follows:0.20g/kg of Nisin,0.40g/kg of lysozyme,0.20g/kg of tea polyphenols, Gynostemma oral liquid could meet the requirements of product shelf life by sterilization of 85 ℃ and 30min with this scheme.
