Xuanwei ham, a traditional ancient Chinese food, was mentioned in Zhongkui by Zeng Yi, a book on traditional Chinese ways of food processing. The value and significance of Xuanwei ham was also emphasized in A Bite of China, a TV program about food in China. In 2009, Xuanwei ham was examined and approved as an intangible cultural heritage in Yunnan province. It is mainly produced in Qujing and Xuanwei areas in Yunnan and extends to Weining and Shuicheng areas as well as some districts in Liupanshui.This article gives a systematic explanation of Xuanwei ham, from some necessary steps in making Xuanwei ham to its political, economic,and social influence on Xuanwei city. The researches conducted are more detailed and closely related to modern social development and the public of primary level.Xuanwei ham is enriched with history. It is named after Xuanwei city due to its unique geographical and weather condition and inherited from elaborate processing by Xuanwei people. From a historical perspective, Xuanwei ham got a relatively good development in Republican period in which the whole country was trapped in war.Ham industry backed up revolutionary movement in China and responded actively to the state calls especially the far-reaching one by Sun Zhongshan that the country can be saved by its people engaging in industry. The years after the founding of the nation,however, witnessed a relatively slow development speed in Xuanwei ham industry.From the perspective its modern development, Xuanwei ham has got more standardization in the processing and more opportunities in the market. Ham industry has become a pillar one in Xuanwei city and begun to take off throughout the whole country which is helpful for the in-depth development of rural ham industry.From the cultural inheritance perspective, the feasibility analysis of the construction of Xuanwei ham museum approves the fact that the production and development of Xuanwei ham is conductive to the establishment of harmonious city culture and enriches both people’s material and spiritual life. Unique regional culture has already rooted itself in over one hundred years of people’s ways of eating ham.The ham museum establishment broads people’s understanding, from a culturalhorizon, of ham industry, an integration of its processing, history and development in modern society, which will push forward the sustainable development of agricultural economy. The feasibility analysis of the construction of Xuanwei ham museum is an innovative point in this paper.From the reality perspective, Xuanwei ham in 2010 was listed as the third batch of national intangible cultural heritage, which aroused wide-spread public attention and received protection from the continuous guidance of government. The public is increasingly concerned about the production and standardized processing of the fresh ham. The city ham industry is larger in scale. However, only the traditional processing way of ham can guarantee customers the authentic and exquisite taste. The original taste of preserved Xuanwei ham can only be achieved through traditional feeding and processing ways of traditional local pigs. Moreover, intangible cultural heritage study has proposed and protected this original ways based on ham’s modern development.The paper is on the development of ham industry and its significance for rural cultural heritage.
