Oil is a kind of advanced natural edible oil which has more abundant nutrition than olive oil and camellia oil. There are various kinds of unsaturated fatty acids in Sorbifolia oil, such as linoleic acid, oleic acid, palmitic acid, etc which are necessary for the metabolism of human body.This paper taked as raw material for the experiment.This experiment applied 3 kinds of extraction, namely pressing, Soxhlet extraction for organic solvent and ultrasonic-assisted extraction, to extract the grease in the kernel and to compare the extraction rate of these three methods. It was found in the experiment that oil rates of compression method, Soxhlet extraction and ultrasonic assisted extraction were 56.7%,62.3%,68.5%, and the extraction rate of ultrasonic extraction culivated oil extraction significantly higher than the compression method and press soxhlet extraction, respectively by 11.8% and 6.2%, better than the other two methods. The experiments take the GC-MS method to get oil qualitative and quantitative analysis results. Oil unsaturated fatty acid (oleic acid, linolenic acid, etc.) contented above 85%. It was visible that the Sorbifolia Oil was filled with nutritious.Secondly, the ultrasonic assisted extraction method is used to extract the Sorbifolia oil which refined and purified after degumming, deacidifying, decoloring process. Determined the physical and chemical indicators of refined contextual Sorbifolia oil, such as density, iodine value, saponification value, acid value, peroxide value, etc., and ultraviolet absorption spectrometer, Sorbifolia oil before and after the refined ultraviolet absorption spectrometry. Results showed that Sorbifolia oil color, transparency and smell are improved after the refined, acid value decreased, peroxide value increased slightly, the total impurity content in the oil reduced, oil quality improved, according with national health standard for vegetable oil. There were obvious differences between Sorbifolia oil refined and crude extracted of ultraviolet absorption spectrum, and obvious absorption peak of refined oil with the number of absorption peaks. Because the crude extract oil will produce a small amount of conjugated olefinic acid after high temperature and alkali refining conditions, also a change of ultraviolet absorption peak.Finally, the natural antioxidant vitamin C (VC) vitamin E (VE) and P-carotene added in Sorbifolia oil to explore Sorbifolia oil oxidation stability under different conditions with the Schaal oven acceleration method, and the determination of peroxide value and acid value to determine the storage period of oil product. The experimental results indicated that the Sorbifolia oil peroxide value and acid value showed a trend of rise with the extension of time, antioxidant activity:VC>VE≈β-carotene. Low temperature and lightless conditions can let Sorbifolia oil storage better and keep the quality. The influence of temperature on oil was more apparent than illumination conditions.
