Fresh Thompson Seedless grape during storage and transportation prone to shattering, rot, mildew and other phenomena, which restricted its development. At present, the domestic in the grape storage and transport process commonly used preservative technology was slow release SO2 treatment, but the type of sustained release, the dose level, supporting the use and other improper use can cause problems and damage to the fruit appears bleaching caused by residual SO2 change quality.In this experiment,4 kinds of preservative model and 2 kinds of different garish process of SO2 preservatives, polymer absorbent pad bag, and combined with each other to form 6 different kinds of treatments on Thompson Seedless grape, during -0.5±0.5℃ under the condition of Thompson seedless grapes for storage, were studied during storage in the bag SO2 accumulation, the effects of different treatments of Thompson seedless grape fruit preservation quality and aroma substances, the specific comparison of different treatments on SO2 gas accumulations, residual of SO2, attachment of stem, pH, and soluble solid content, hardness, titratable acid, reducing sugar, decay rate, bleaching rate, expulsion rate, and grain polyphenol oxidase and other indicators, and during the pre cooling,0.5 mL/m3 ozone gas and 2 kinds of fresh-keeping agents were used to form 3 different kinds of treatments, the specific comparison of different treatments on pH, titratable acid, soluble solid content, decay rate, bleaching rate, expulsion rate, with a view to sustained-release sulfite SO2 application and commercialization of Xinjiang Thompson seedless grapes preservative storage to provide theoretical and practical basis. The main findings are as follows:1, Seedless grapes after storage 10 d, CT2 treatment,precision punching+Free garish +garish absorbent pad bag had low SO2 accumulation, and the average accumulation respectively is 1.15 mg/kg,0.77 mg/kg, by contrast, CT2+CT5 treatment, CT2+Free garish treatment, precision punching+free garish treatment of SO2 accumulation was relatively high,and compared the CT2 free garish processing, precision punching processing, precise punching without garish disposal bags of SO2 accumulation to fast much, CT2+free garish average accumulation reached 8.73 mg/kg, during storage 10~87 days, CT2+CT5, CT2+free garish treatment of SO2 accumulation 6.71 mg/kg and 8.14 mg/kg in bags, indicating that uniformly and slowly release SO2 during storage.2, Compared with the control group,6 kinds of different treatment (CT2, CT2+CT5 treatment, CT2+free garish treatment, precision punching treatment, precision punching processing, precision punch+free garish treatment, precision punching+free garish+garish absorbent pad bag) were different degrees of improve the fresh-keeping effect of Thompson seedless grape. During storage, CT2+free garish treatment showed the most effective treatment for maintain the physiological quality of Thompson seedless grape, after 50 days, the soluble solids content of CT2+free garish treatment decreased 1.530% than the initial value, while the blank control of the soluble solids content decreased 2.938% compared with the initial value; the titratable acid content of the blank control, CT2+free garish treatment compared with the initial value decreased by 36.51%,22.22%, slowing the decline of titratable acidity; for attachment of stem, CT2+free garish treatment was 55% higher than the control group;the hardness of CT2+free garish treatment than the initial value decreased 26.062%, showed a significant difference (P<0.05) compared with the control group,while the control group than the initial value decreased 44.536% decrease; the reducing sugar content of CT2+free garish treatment decreased 3.83 than the initial value, while the blank control of the soluble solids content decreased 5.091 compared with the initial value;between CT2+free garish treatment and blank control of polyphenol oxidase showed significant difference (P< 0.05). After 105 days, in addition to precision punching treatment and precision punch+free garish treatment, residual amount of SO2 during other treatments did not exceed 50 mg/kg during storage. In inhibiting decay, shattering suppression, reduce bleaching aspects, CT2+free garish treatment was good.3, In the six different treatments, during 60 days of storage, volatile matter of Thompson seedless grapes was mainly composed of aldehydes, alcohols, esters, CT2+free garish treatment of aldehydes is higher than that of other treatments. CT2+free garish treatment primary aroma substances are composed of (E)-2-Hexenal, and hexanal, which (E)-2-Hexenal is the highest content of aldehyde compounds, (E)-2-Hexenal of CT2+garish free treatment decreased 0.42% than the initial value,and can well maintain Thompson seedless grape flavor, SO2 has little influence on grape aroma.4, Ozone combined with two preservatives can delay the soluble solids, the titration acid, and has a certain effect on the inhibiting of the rise in pH of the juice, reducing the rate of decay of grapes, bleach rate, shattering rate.In summary, In six different treatments, six treatments were maintained varying degrees of seedless white grapes storage quality, delaying senescence, which CT2+garish free treatment has the best effect on fresh-keeping during storage. Ozone and two kinds of preservative treatment, the combination of ozone and preservatives to maintain the storage quality of Thompson seedless grapes were better than the single use of preservative.
