Acid value, iodine value and peroxide value can be expressed the quality of oilintuitively. The method of detection of oil emerges in endlessly. The chemical method has gradually become obsolete, and in recent years the development method of using instrument for oil testing is rapid, especially near infrared spectrum. But it can’t still meet these testing requirements, including fast, large volume, simple and easy. This paper first expounds the research progress of the method of acid value, iodine value and peroxide valueof the oil sample, and the research progress of near infrared spectrum detection grease composition. This article test the sample through infrared spectrum in the infrared region(4000~2500 cm-1). The advantage of this approach is samples without pretreatment, speed, high efficiency and accuracy. Compared the experiment data of detecting oil samples by mid-infrared region of infrared spectrum and ultraviolet spectrum with the standard sample data, and contrast the experiment data obtained by gas chromatography with the standard data, standard curve was obtained by linear fitting of acid value, iodine value and peroxide value. Using the curve predict acid value, iodine value and peroxide value of oil samples. The linear correlation coefficient(R2) between the acid predicted values of peanut oil, rapeseed oil, palm oil and mix sample and the actual acid value obtained by chemical titration method are:.9691, 0.9585, 0.7529, 0.9072. The linear correlation coefficient(R2) between the iodine predicted values of peanut oil, rapeseed oil and mixed oil of soybean oil and peanut oil and the actual iodine value obtained by chemical titration method are: 0.8291, 0.7853, 0.9198. The results show that the predicted values and actual measured by titration of acid value, iodine value and peroxide value have a good linear. The determination of iodine value by infrared spectrum scanning the grease CCl4 solution broke the previous coating determination method of related parameters for oil.
