Neotame is a new sweeteners which is non-nutritive and high-intensity. The sugariness of neotame is 7000-13000 times that of sucrose. Neotame is a kind of dipeptide sweeteners and is systematically evaluated with the aspect of safety, effectiveness, stability, economy and Environmental protection, which demonstrate its broad prospects in food industry.From the view of industrial point, a suitable production process of 3,3-dimethyl butyraldehyde and neotame was researched in our issue. And the reaction conditions have been studied in detail. In this paper,3,3-dimethyl butyraldehyde was synthesized by t-butyl chloride and vinyl acetate with the reaction conditions that raw material ratio of 1.2, the reaction temperature is controlled in the range of-7-0 ℃ and hydrochloric acid as hydrolysis catalyst. Simultaneously, neotame was produced by 3,3-dimethyl butyraldehyde and aspartame and the optimal reaction conditions was selected as that the material ratio is 1.1:1, the reaction temperature is controlled in the range of 35-40 ℃, and proportion of 3,3-dimethyl butyraldehyde and 5% Pd/C is 1: 0.09. The products were analyzed and characterized by GC, HPLC, IR, NMR, mass spectrometry, thermal analysis, et al.The effect of temperature, pH, oxidant and reductant on the stability of neotame was studied. And neotame can be saved under the condition of T< 100℃ and pH=3.7. Additionally,30% H2O2 can significantly effect on the stability of neotame which is different from reducing agent ascorbic acid.The compound sweeteners contained neotame was preliminary studied in this subject. The 100 times and 200 times compound sweeteners were prepared and taste evaluated. The application of the prepared compound sweeteners in cake, juice was simply researched. A kind of table sugar with neotame, xylitol, sorbitol, erythritol Isomaltooligosaccharide as source of sweetness was produced, which has a different sugariness because of different ratio of single sweetener.
