In this study, an oyster polysaccharides apple vinegar(OPAV) was prepared by adding oyster polysaccharides(CGPS-1) to an apple vinegar based on orthogonal test and investigated the biological activity. The results will be helpful for the application of OPAV.The table of orthogonal experiment was designed by the results of single factor experiments and the score of OPAV was evaluated by sensory evaluation.The results showed that the best formula for the vinegar was 0.3% oyster polysaccharides, 0.1% yeast, 0.1% citric acid and 10% honey and score of sensory evaluation was 86.6.The characteristics of OPAV are as follows: strong vinegar aroma, golden color,moderate sweetness and sourness.First to investigate antioxidant activity of OPAV in vitro, including scavenging activity of ABTS and DPPH radicals and reducing power.The results indicated that OPAV showed stronger antioxidant activity than oyster polysaccharides and apple vinegar, and increased in a concentration-dependent manner.The ABTS radical scavenging activity of OPAV was up to 95.81% at the concentration of 0.51 mg/m L. The DPPH radical scavenging activity of OPAV was up to 95.11% at the concentration of 1.95 mg/ m L. Therefore, OPAV is a good antioxidant.Because of the strong antioxidant activity of OPAV in vitro, the protective effects of OPAV on alcohol liver injury were assayed.The optimal dose of acute alcohol intoxication drunkenness was determined in mice.From the results we know that the best dose of 52% ethanol-water solution was 0.25 m L/20 g.Then the protective effects of OPAV against acute and chronic alcohol liver injury in mice were investigated.The contents of SOD、MDA、GSH、ALT、AST、ADH were assayed and histopathological change was observed with microscope.The results showed that OPAV had protective and repair effects on alcohol liver injury in mice.Because of the protective effects of OPAV on liver injury,the hypolipemic effect of OPAV was assayed. The results showed that, compared with model control,OPAV can decrease the contents of TC and TG,increase the contents of HDL-C in serum, TC and Fat in excrement.The OPAV can significantly decrease blood lipid.
