The sucrose producing of Tang Dynasty plays an important roles that connects the past and future in the whole history.Bring forward means that sucrose producing can go backs to many years ago, the sucrose producing of Tang dynasty has achieved a new level,mainly through inheriting predecessors’ achievements and absorbing foreign advanced technology in sucrose producing.Influence on later means that the sucrose producing has been inherited and developed by the later generations,and laid the foundation on the development of the later generations’ sucrose producing.So that, it provides us valuable historical references and lessons that can be used in today’s innovations of sucrose industry.The distribution characteristics of sucrose in the Tang Dynasty are mainly reflected as follows:firstly,the sucrose producing have wide distributions.Secondly,the sucrose producing have formed sucrose centers.Third,the sucrose producing are unbalanced.The last,Sucrose distribution pattern is closely related to regional economic development level.The formation of these characteristics, it is affected by the natural environment, second, is closely related to good economic profit, the third is having nothing to do with increased demand for sugar in tang dynasty, the tang dynasty sugar production development is the result of people in order to satisfy their own needs. The fourth is that the spread of cane sugar production technical level has made a great contribution.The development of sucrose producing of Tang Dynasty is that in the original based on improved the sand sugar production technology, and spurring the emergence of new varieties of sugar- frosting. In addition, sugar cane planting technology was improved, not only in the sugarcane planting time and planting methods of former generations have very good inheritance, and we have progress in sugarcane growth management, sugarcane varieties increased. Another, sealed and cold storage method of sucrose storage technologies such as developed to a certain extent, also reflects the sucrose in the tang dynasty to further production.The sugar production in Tang dynasty have an important influence on the social development. First,it is to promote life people’s diet diversification, sugar cane can make fruit was born with her, sugarcane pulp as a beverage, sugar as a condiment; second, it is to promote the development of medicine, tang dynasty increasing understanding of sugarcane and cane sugar medicinal value, and can effectively tested in practice; Third, it is to promote the commercialization of the production, sugarcane and cane sugar as the flow of goods in the market, to enrich the content of the goods in the tang dynasty, to promote the development of commodity economy; Finally enriched the spiritual life of the tang dynasty, sweet sugarcane and cane sugar not only symbolizes flourishing and happy, at the same time warning significance.
