Effects on the egg and meat quality with the ecological environment of chickens which were fed in the forest have been concerned by people. Some healthy local laying hens and broilers with close weight were selected to be divided into different treatments and fed in the jujube forest where was planted alfalfa. This experiment aimed at looking for the appropriate stocking density with supplementaries of laying hens and the suitable age with stocking density of broilers and providing theoretical bases through the determination of the production performance and quality index. The results showed that:1. Laying hens(1) The stocking density with supplementaries had a significant effect on the laying rate(P<0.01)and there were no significant effects on the egg weight or egg feed ratio(P>0.05); Also, there were no significant differences between control group and group-two in egg weight, egg laying rate or feed egg ratio (P>0.05).(2) Effects of stocking density and supplementaries separately on the egg-weight and egg-yolk were significant(p<0.05) and very significant (p<0.01).There was no significant effects of stocking density, feeding quantity as well as their interaction on the rate of egg-white and egg-yolk. The yolk weight, egg-shell weight and eggshell strength of groups which was fed by50%were significantly lower than70%on the same condition of100hens per667m2, while the egg-weight, egg-shell strength and the thickness of egg-shell of the group fed70%was superior than other groups. The eggshell quality of the control group was lower than the free range groups.(3) The stocking density had a very significant effect on total cholesterol(p<0.01)and a significant effect on the content of the phospholipid on the whole experiment period (p<0.05); There were no significant effects on the components of nutritional for their interaction (p>0.05). The per gram cholesterol of the control group was significantly greater than100hens per667m2groups(p<0.05), and its total cholesterol was significantly greater than100hens per667m2groups and group-four(p<0.01), The ash content of control group was smaller than group-one (p<0.05); The cholesterol of the group fed by50%was significantly less than70%on the100hens per667m2condition, while there were no significant differences in the content of phospholipid (p>0.05).Combining with the laying performance, egg quality and the content of nutrient, we can see,group-two was the best.2. Broilers(1)The daily gain of the group with150broilers per667m2which was free ranged at80days was significantly higher than the control group(p<0.05),and there were no significant differences among other treatments (p>0.05).(2)Effects of stocking density on eviscerated and eviscerated rate was not significant on the same day old stocking condition, but it significantly influenced on leg muscle rate(p<0.05).The eviscerated rate of groups of50days old stocking less than80days on the same density condition, there was a trend that the rate of pectoral and leg muscle more than those groups free ranged at80days.(3)Effects of stocking density and ages on the meat color was not significant(p>0.05).The PH24h was not significant between the free-range groups and the control group whose shear force of leg muscle was lower than the free range groups.(4)The content of intramuscular fat in pectoral muscle at50days of free-range groups was significantly higher than the control group(p<0.05), while both cholesterol and the crude protein of them were no significant difference(p>0.05).Compared with the control group, there was no significant difference in the content of intramuscular fat(p>0.05),crude protein and cholesterol in leg muscle, while there was a trend that the serum total cholesterol and Serum triglyceride were lower than the control group.(5)Though the content of inosine acid of stocking groups was higher than the control group, the difference was not significant.Combing with daily gain, slaughter performance and nutrients, we can see,the mode which was150hens per667m2and free ranged at80days old is better.
