Duck meat is rich in nutrition, which contains higher protein, B group and Evitamins than other, it has become a kind of quality food for human. But the safeproblems on food of the pesticides and other harmful substances residues have causedmore and more people’s attention, so a rapid, simple detecting technology for pesticidesresidues in duck meat is urgently needed in meat food safety. Study on detection ofpesticides residues in sheldrake using fluorescence technology combined withchemometric methods in this paper. The main contents and results show as follow:(1) Synchronous fluorescence spectroscopy combined with variable selection andregression algorithm was used to achieve the rapid detection of carbaryl and carbofuranresidual contents in duck meat. Firstly, synchronous fluorescence characteristics of thestandard solution of two pesticides and the duck samples containing pesticides wereanalyzed. The best conditions of experiment was explored, the optimum excitationwavelength for the duck meat containing carbaryl and carbofuran were320nm and335nm, respectively, the optimum wavelength difference Δλ were140nm and120nm.Secondly, GA algorithms was used to select the variables of characteristic wavelengthfrom spectral band of two kind of samples. GA was best result of optimum selectioncompared with the CARS and SPA algorithm, leading to the result that the number ofoptimum variables were21and19, respectively. Finally, the prediction GA-SVM modelof pesticides residue in duck meat was established by using support vector machine(SVM) algorithm. The result showed that the prediction model of GA-SVM was the bestafter compared GA-PLS and GA-PCR model, the determination coefficient (R2) ofcarbaryl and carbofuran were0.9764and0.9994, respectively, the root mean squareerror of prediction (RMSEP) were12.23and0.8787mg/kg, respectively. The resultsapproved that synchronous fluorescence technology combined with SVM was used torapidly detect the content of pesticides residues in duck meat.(2) Triazophos residues of the duck extract was successfully and rapidly detected byusing three-dimensional fluorescence technology combined with ATLD algorithm.Three-dimensional fluorescence of triazophos standard solution and the extract samplescontaining triazophos were analyzed, respectively. And finally the optimum emissionwavelength was determined at320nm. It was found that the fluorescence peaks oftriazophos and duck meat extract were seriously overlapped. The best prediction modelwas established through the array of concentration was obtained from thethree-dimensional data matrix by using ATLD algorithm When the number ofcomponents was set as2. The R2and RMSEP of predicton model were0.9741and0.764μg/mL, respectively. The results indicated that the triazophos spectra was separated fromthe complex system of duck meat extract by using fluorescence analysis techniquecombined with three linear decomposition algorithm, the purpose of rapid detection oftriazophos content in duck meat was successfully achieved.
