In the experiment, apples of15years "Changfu Ⅱ "(Malus domestica Borkh.cv.’Fuji’)were encased by double-paper and plastic papers respectively. We measured the contents of total soluble, reducing soluble, starch, pectin, cellulose and hemicelluloses and measured the enzyme activity of Amylase (AM), Sucrose synthase (SS).Sucrose phosphate synthase (SPS), Acid invertase (AI),Neutral invertase (NI), etc. in different bagging fruits. In addition, the content of carbohydrate and the activity of some metabolism enzymes of pulp tissue from differnt parts of the same treatment are measured. The results show that.1With the growth of fruit, the content of soluble sugar and reducing sugar increase gradually. They reached the highest level at145d after flower, then the content reduced; the content of starch decreased fruit qrowing period. The content of total sugar, reducing soluble and starch of control fruit higher than the treatment. The content of total sugar, reducing soluble and starch of plastic bagging fruit higher than the paper bagging fruit. With the growth of fruit, the content of cellulose, hemicellulose and pectin reduced, and content of cellulose, hemicellulose and pectin in different treatments were sets of paper bags<plastic bags<controls. Which hemicellulose is greater influnced by different bagging treatments.2After bagging, the activity of SS,SPS,NI,AI and Amylase lower than the control, paper bagging fruit the activity of SS,SPS,NI,AI and Amylase lower than the plastic bagging.The activity of amylase of paper bagging higher than plastic bagging in core organization.The activity of amylase paper bagging lower than plastic bagging in pericarp organization.3The effect of different organizations on content of carbohydrate are different, In the pericarp organization on content of cellulose, hemicellulose and pectin higher than core organization; The content of soluble sugar, sugar and starch of core organization higher than pericarp organization; between different organizations, the activity of amylase of core organization higher than pericarp organization, The differences of the activity of amylase among paper bagging fruits was small, At the mid fruit development, The activity of core organization SS, SPS, AI and the NI was higher than pericarp organization.
