China is the biggest country of the persimmon production in the world. The persimmon plant area in China had reached to 11.1015 million mu in 2013, and the output of fresh fruit was up to 3.6172 million tons, among which the majority was pollination constant astringents(PCA). The PCA persimmon had a poor goods performance, lacked of market, and the deep processing technology also laged behind, so the development of the persimmon industry in China was seriously restricted. Persimmon tannin had wide application value and potential market because of its’ special physical and physiological and biochemical activity, so it can help open up broad prospects for persimmon, especially for the PCA which had a extremely high tannin contents.In this paper, the growth process of fruit and the variation trend of total phenols and condensed tannins contents in different persimmon varieties were systematically studied,and the correlation between characteristics of tannin cells and total phenolics and condensed tannins contents in persimmon fruit were studied. The main contents and conclusions were as follows:1.The optimum conditions for condensed tannins determination by Vanillin-hydrochloric acid assay were as follows: 2.0 g vanillin solution in 100 m L methanol, and 15 m L/100 m L of concentrated HCl in methanol, for 0.5 h.2.Total phenols and condensed tannins contents in different persimmon varieties showed similar changing rules. peaking at 35~50 days after bloom, followed by reducing gradually. but the contents and variations among different varieties differed significantly. Among these, the variations of total phenols and condensed tannins content were almost the same between Chinese pollination constant nonastringent(C-PCNA), Japan pollination constant nonastringent(J-PCNA), pollination variant astringent(PVA), pollination variant nonastringent(PVNA) and pollination constant astringent(PCA), approximately meeting the law: PCA>C-PCNA>PVA>PVNA>J-PCNA.3.The total phenols and condensed tannins in per PCA persimmon fruit. was dynamically changing and constantly accumulating in the whole growth period. Both the total phenols and condensed tannins had reached a higher level fruit at 110 days after bloom in per PCA persimmon, and the bigger fruit had a relatively higher contents. Namely, it’s most efficient to pick the bigger PCA persimmon fruit at 110 days after bloom to extract the total phenols and condensed tannins. Then filtered out Yueshi, Chaoyang Yuanxiaoshi, Haiyang Dabianshi, Damianhu and more than 10 PCA persimmon varieties which were suitable to be the raw materials to extract the total phenols and condensed tannins.4.The size and quantity of tannin cells which in PCA(pollination constant astringent) cultivars were larger while those of Chinese PCNA(pollination constant nonastringent) and Japanese PCNA cultivars except for ’ Suruga ’ were smaller. Part of the PCA cultivars were similar to PVA(pollination variant astringent) and PVNA(pollination variant nonastringent) cultivars.Most significant(P<0.01) corelations exist both in the volume of tannin cells and total phenolics content as well as condensed tannins contents of mature persimmon fruit respectively.
