In order to study effects of erecting ipomoea aquatica floating bed on water quality of ponds, growth and flesh quality and antioxidant capacity of grass carp, we chose 5 east-west adjacent ponds in Chong lake fisheries, which area were all 40 m ×70 m, named 11 #, 12 #, 13 #, 14 # and 15 #, respectively. Similar proportions of 5pond fish breeding, and the aquaculture water was from the Chong lake. Erecting ipomoea aquatica floating bed on ponds 11 #, 12 # and 13 # in May 2013, the floating bed for each of the 26 m by 2m, and four ipomoea aquatica floating bed for each pond, the floating bed area accounts for about 7.5% of ponds, 14 # and 15 # ponds without processing. After the experiment, we selected 20 grass carp from each pond randomly,determination the growth index, body weight, body length, body height, body width et al. Determination of anatomical liver weight, visceral weight and shell weight,collecting the muscle, determination of muscle conventional nutrient, muscle water holding capacity, texture characteristics of muscle and sensory analysis.Collecting blood, liver and muscle frozen in liquid nitrogen, determination of blood physiological parameters, determination of serum and liver tissue homogenate and muscle tissue homogenate antioxidant index. Make liver section, HE dyeing to observation liver cell state. The experimental results were as follows:The p H and dissolved oxygen diurnal variation amplitude of the experimental ponds less than the control ponds, the water was more stable. At the early breeding,there was no significant differences in content of NH4+-N and NO2--N. As the breeding experiment, the transparency of the control ponds was reduced, the content of NH4+-N and NO2--N was relatively higher, the experimental ponds was significantly lower than control ponds. Erecting ipomoea aquatica floating bed can better improve the water quality, and it had a positive role in water stability.The average weight of grass carp in the experimental ponds was 723.60 ± 77.20 g, and the control ponds was 641.40 ± 37.40 g, the grass carp weight ratio of experimental ponds was significantly higher than control ponds. The body length,body height and breadth of grass carp in the experimental ponds were all higher than control ponds, but there were no significant differences. The visceral mass ratioof grass carp in the experimental ponds was lower than control ponds, and the liver somatic index was significantly lower than control ponds. The condition factor of the experimental ponds was higher than control ponds, no significant differences.Erecting ipomoea aquatica floating bed could promote the growth of grass carp, and it had a certain influence on the growth indicators.The muscle p H of the experimental ponds was significantly higher than control ponds, and the drip loss was significantly lower than control ponds. The stored loss of the experimental ponds was significantly lower than control ponds. At the end of frozen experiment, the frozen leakage rate of the experimental ponds was significantly lower than control ponds, with muscle thawed, the frozen leakage rate increased, after thawed 2h, the frozen leakage rate of control ponds reached 3.04 ± 0.10%, but the experimental ponds was 2.10 ± 0.06%, the difference was significant. There were no significant differences between the content of moisture of experimental and control pond, the lipid of experimental pond was significantly lower than control ponds, the protein was significantly higher than control ponds, and there were no significant differences between the ash of experimental and control pond. The cooked rate of experimental was significantly higher than control ponds, the flesh content of experimental was higher than control ponds, but there were no significant difference.The muscle hardness, springing, gumminess and chewiness of experimental were higher than control ponds, but there were no significant differences between the five ponds. The score of general acceptance, fragrance, elasticity and palatability of experimental. Erecting ipomoea aquatica floating bed had a positive effect on the muscle quality.The serum cholesterol levels of grass carp in the experimental ponds was significantly lower than control ponds, the content of NO in serum was significantly higher than control ponds, the glucose levels was significantly lower than control ponds. The content of AKP, γ-GT, LDH, ALT and AST in experimental ponds were significantly lower than control ponds, but no significant damage was found in the liver section of experimental and control ponds. That said that erecting ipomoea aquatica floating bed had a positive effect on the blood physiological of grass carp.The T-AOC of the liver homogenate in experimental ponds was significantly higher than control ponds, and the other two tissues of T-AOC in experimental ponds was higher, but there were no significant differences from control ponds. The content of SOD in liver and muscle tissue homogenates of experimental ponds was significantly lower than control ponds, there were no significant differences in serum.The content of GSH-Px in Muscle tissue homogenates of experimental ponds was significantly lower than control ponds, there were no significant differences in the other two tissues; The content of GST in serum of experimental ponds was significantly higher than control ponds, the muscle tissue homogenate was significantly lower than control ponds, and there were no significant differences in liver tissue homogenate. The content of MDA and protein carbonylation in serum and muscle tissue homogenate of experimental ponds was significantly lower than control ponds, there were no significant differences between the two oxidative damage index in muscle tissue homogenate of experimental ponds and control ponds. Erection of ipomoea aquatica floating bed had a positive effect on the grass carp body’s defense against oxidative stress.Erecting ipomoea aquatica floating bed in intensive pond can improve water quality of pond, reduced the content of NH4+-N and NO2--N significantly. The better water environment of experimental ponds contributed to the growth of grass carp, and it has a positive effect on the formation of the muscle quality and the antioxidant capacity of grass carp.
