Grain is the basic food of human survival and development. It is also thestrategic material of the national economic development and political stability. Acountry’s stability depends on its grain security and stability. Autonomous respirationof grain and activity of mold are two elements of dynamic change of storageenvironment. Judge food security situation by monitoring respiration of grain heap.The dynamic change of food quality in the process of grain storage is caused by foodown breathing. Mold activity hazard in food is one of the leading causes of grain loss.By simulating grain storage, simulate a variety of temperature, humidity,germ-carrying, etc. By combining with the colony counting method detectiontechnology, explore breathing and the characteristics of the microbial activity,drawing the characteristics of breath of grain and the microbial activity to generatecarbon dioxide. Comparison by contacting the actual granary storage, validatingfeasibility of fast detection method based on CO2detection method applied to thepractical of grain storage and if grain itself respiration will affect grain mildewoccurrence point. Through the above research, under the condition of safety CO2byfood breath is very weak, which can be used as reference base of gas change of grainstorage. The moisture on the high side by transfer function obviously affects thecontent of CO2produced by grain breathing and microbial growth. High moisturegrain is extremely easy to rotten. The metabolism of food is one of the indexes ofgrain quality. Under safe moisture condition, CO2content in the new environment ishigher than the old, but both are in safety margin. When moisture content is higherthan the safe moisture, due to the growth of microorganisms, CO2content in the newenvironment is less than the old environment. Microbial role in grain bulk is affectedby grain moisture, microorganism species and grain integrity. From initial quantityof pathogen can not unable to predict the influence of microorganism during grainstorage. In methods depend on mold activity production conduction, the carbondioxide method has its unique advantages. Compared with the temperature conduction method, CO2test used to detect microbial activity more sensitivity.Under the condition of the real positions, CO2test is feasible. The monitoring ofmold activity is operable, which can be further verified in barns. Through the aboveanalysis, it can be clearer to understand the change trend and the influence factors ofCO2storage. It provides the new grain technology of CO2detection and reference forthe development of China’s grain storage industry.
