There are a lot of nutrient elements in storage root, meanwhile, stems and leaves have much high nutrition value. In recent years,research on sweetpotato for vegetable use is increased. Sweetpotato sprouts is a new type of greens. In this paper, the materials was the root tuber of sweetpotato“Xinxiangâ€, and influence of different culture conditions and harvest times on quality of hydroponically grown sweetpotato sprouts was explored. The main conclusions are as follows:(1)The effect of temperature on the quality of sweetpotato sprouts was studied, and the results showed that: with the temperature increasing, the leaf color of sweetpotato sprouts became lighter gradually; the water content has little change; the pigment content and nitrate nitrogen content decreased gradually; the soluble sugar content had an increase trend; while the soluble protein content and vintamin C content increased initially and decreased later. Texture characteristics decreased gradually such as hardness and cohesiveness.(2)The effect of light intensity on the quality of sweetpotato sprouts was studied, and the results are as follows: with the light intensity strengthening, the leaf color of sweetpotato sprouts darkened; the pigment content and soluble sugar content were increased; the water content and nitrate nitrogen content decreased gradually; while the soluble protein content and vintamin C content increased initially and decreased later. Texture characteristics increased gradually such as hardness and cohesiveness.(3)The effect of photoperiod on the quality of sweetpotato sprouts was studied, and results indicated that: the extended photoperiod could deepen the leaf color of sweetpotato sprouts and increase the content of pigment. At the same time, the water content and nitrate nitrogen content decreased gradually, while the soluble protein content increased firstly and then decreased. Photoperiod had no significant influence on the soluble sugar content and vintamin C content. Texture characteristics increased gradually such as hardness and cohesiveness.(4)The effect of relative humidity on the quality of sweetpotato sprouts was studied, and it turned out that the physiological indexes had their own variation trend.
