In this thesis, hawthorn as material storage bags to take a small package(Simple Storage MA) and exposure in the form of storage in cold storage for Hawthorn comparison test. Hawthorn on the hardness of fresh, soluble solids, conductivity, weight loss, decay rate,titratable acidity, Vc content and determination of ascorbate peroxidase Hawthorn organization(APX), phenylalanine ammonia-lyase(PAL), peroxidase(POD), peroxide Catalase(CAT), polyphenol oxidize(PPO) activity and total phenol content, the results showed that simple inhibition of MA storage can decrease the hardness, Vc oxidation and conductivity increased, reducing the weight loss rate, decay rate and titratable acid, hawthorn delay aging, to better maintain the content of soluble solids, inhibit APX activity decreased, reducing PAL, POD and PPO activity, delayed CAT Time of peak activity, but also to maintain a lower total phenol content, hawthorn to prevent decay, extend the storage period thereby, fresh fruits and vegetables provide a new way.In general, the activity of ascorbate peroxidase(APX) in simple MA storage was more than that in control group. Therefore, the simple MA storage can effectively inhibit the APX activity decreased, more effective decomposition of H2O2 in the tissue of the hawthorn, slow down the aging of Hawthorn. Simple MA storage could delay the time of the PAL activity peak, and the PAL activity of the simple MA storage was significantly lower than that of the control group. It is indicated that: with the extension of storage time, the simple MA storage of Hawthorn lesion is less, and the disease resistance is stronger. In the storage period, a large number of free radicals, which stimulate the body’s self protective reaction, the body’s ability to remove the free radicals increased, resulting in an increase in the activity of peroxidase(POD). With the extension of storage period, the POD activity of simple MA storage was higher than that of the control group, and the resistance of the hawthorn was enhanced, which was favorable for the extension of the storage period.
