objective:The current situation and problems was studied based on the research of the situation and daily regulation of the catering services in Gusu district in Suzhou, domestic and overseas’ policy to the management of catering services was borrowing in the same time. The purpose is gave better advises and made countermeasure for daily regulation and the actions for protect the food safety.Material and methods:According the data of the regulatory and the food safety in health supervision department,20 large-sized catering unit,100 medium-sized catering unit,300 small-sized catering unit 100 school canteens and 50 enterprises canteens were sampled in Gusu district in Suzhou. The data contains that the holding situation of catering service license and health certificate, the situation of the establishment for food safety management system, the situation of administrator for food safety management, the situation of purchasing food record rope ticket and acceptance record, the custom of the staff, the situation of record for morning check, the situation of identification for tools and containers, the situation of operation for cold storage (frozen) facilities, special room and the situation of quantitative assessment for the catering units was statistically analyzed using the SPSS 13.0 software. The data was entering and the database was setting up using the Excel Software.Main results:1.The following data which contains the holding situation of catering service license and health certificate, the situation of the establishment for food safety management system, the situation of administrator for food safety management, the situation of purchasing food record rope ticket and acceptance record, the custom of the staff, the situation of record for morning check, the situation of identification for tools and containers, the situation of operation for cold storage (frozen) facilities, special room and the situation of quantitative assessment for the catering units has statistically significant different among the different size catering services units, school canteens and enterprises canteens. It was better in school canteens, larger-size catering services units than the medium-size catering services units and enterprises canteens. And it was worst in the small-size catering services units.2. Most of larger-size catering services units were rated as A and B in quantitative a ssessment; And most of medium-size catering services units were rated as B, and a sm all part of medium-size catering services units were rated as A and C. However, some m edium and small-size catering services units were not rated for the reason of below the standard and needed to be changed. The quantitative rating of school canteens was high er,most of them were rated as A and B; Most of enterprises canteens were rated as B an dC.Conclusion and suggestions:1. The environment, facilities and food safety management in larger-size catering services units and school canteens was better than the medium and small-size catering services units and enterprises canteens in Gusu district in Suzhou. The basic condition of larger numbers of small-size catering services units is bad, and the standardization management level is low, the leaders are lack of legal consciousness, the facilities are lacked, the food safety consciousness of the employee was weak. In a word, it have great hidden dangers in food safety, and the difficult and the focus of the food safety management was the small-size catering services units.2. It should be developed the level of food safety management in larger and medium size catering serviced units, school canteens and enterprises canteens through popularizing the 5S management method. The problems in small size catering services units should be solved through the perfect regulation system, perfect the laws and regulations, the support of the governments, snookering specification to gradually from various aspects. Meanwhile, the credibility system construction of the catering services should be attended, the right public opinion was guided by the industry association, the aim was improving the food safety level of catering serviced in Gusu district.
