With the increasingly frequent exchange and communication between countries, more and more foreigners expect to obtain a deep understanding of Chinese profound culture, especially the glorious food culture. A Bite of China which is an excellent documentary of Chinese food culture broadcasted by CCTV, not only shows the traditional Chinese food culture, but at the same time delivers Chinese cultural values from unique humanist perspective.The source text of this translation practice is chosen from the book a Bite of China published by Guangming Daily Press, which is an attempt to promote the transmission of Chinese food culture. Under the guidance of approach to translation as adaptation and selection put forward by Professor Hu Gengshen, during translation, the author endeavored to adapt to the translational eco-environment in different levels and different aspects, namely in multi-dimension such as in the linguistic dimension, cultural dimension and communicative dimension, making adaptive selection so as to produce translation with high degree of holistic adaptation and selection.This report chooses some examples in a Bite of China for study, exploring some detailed translation skills and methods in the translation of dish names, Chinese culture-loaded words and some sentences and paragraphs. In the translation of dish names and Chinese culture-loaded words, some methods such as literal translation, free translation, transliteration, etc. are proved very effective in the successful adaptation to the translation eco-environment. As for the translation of difficult sentences and paragraphs, analysis will be made on how to select proper translation strategies in the linguistic, cultural and communicative dimension for the adaptation to the need of the target readers.
