As an important pillar of our national economy, the safety problems of agriculturalproducts quality concern people’s livelihood. Agricultural products cold-chain logistics canguarantee the food safety from logistics operation process. Also, it reduces safety accidentscaused by contamination, deterioration and decay during the process of logistics.However,along with the increased demands of cold-chain food consumption, the cold-chainlogisticssafety problems emerged more and more constantly. The safety issue which is about thebroken cold chainhas become a bottleneck problem that is known by all. On account of thisproblem, thedissertation starts from the analysis of agricultural productsoperation process.Byidentifying and assessing the risks which appear during the operation process of cold-chainlogistics, we hopeto achieve the purpose of improving the operation efficiency and ensuringfood safety. This article mainly studies from the following several aspects.First, this paperidentifies the risks and analyses the main risky factors during the operation process ofcold-chain logistics.Second, it builds thefuzzy artificial neural network assessment modelwhich is aboutagricultural products cold-chain logistics. Then, the thesis takesthe fresh grapesfor an example to carry on the empirical analysis. Based on the analysis of fresh grapesoperation process, it identifies the main safety risk factors. Also, by using the risk matrixmethod, the paper analyzes the risk factors and confirms the level of risk factors. Throughfuzzy comprehensive evaluation method, the paper evaluates the fresh grapes cold-chain risklevel and the probability of each risk factor.Lastly, the fuzzy artificial neural network modelwas carried out to verify the cold-chain risk level. On the basis of verification, the paper putsforward to the risk control measures.
