| In this experiment, Hanyuan Mandarin and Longan Grapefuit as the experimental materials, the study on variation rules of different storage methods of fruits during storage, including Hardness, TSS, Total Acid, Total Sugar, VC, Cellulose and Respiratory Strength, Conductivity, POD, SOD, CAT and other physiological indicators.Then selected the best storage and processing methods, and the experimental results are as follows:1、The research on postharvest physiological characteristics of Hanyuan Mandarin. The Mandarin with calcium lactate solution respectively 1%,1.5%,2%,1%,1.5%. clove oil solution of 2% chitosan solution and 200ppm0,02%,400ppm0.04%, 800ppm0.08% smear processing storage. Orange fruit during postharvest storage of fruit hardness, moisture content, total sugar, total acid, VC, respiratory intensity decrease, TSS will first increase and then decrease, cellulose and conductivity showed a rising trend. With the extension of storage time, various internal metabolism and adverse external environment, malondialdehyde (MDA) in the mid to late rise more quickly, late in the storage of nutrients, fruit consumption, free radicals and other harmful products continue to accumulate, the content of POD decreased gradually, CAT showed a gradual upward trend, and the emergence of SOD first increased and then decreased. The enzyme activity appeared increasing trend, adjust the orange post harvest physiology, guarantee the quality of fruit.2、Filtrate the best storage condition of Hanyuan Mandarin. The quality index of fruit firmness, TSS, total acid and total sugar in the 2% calcium lactate treated best, while VC and water in 1% under the best treatment of calcium lactate. Cellulose in three kinds of processing conditions change is not much difference, there is no significant difference.1.5% calcium lactate,2% chitosan,0.02% clove oil treatment reduced the relative conductivity of orange, maintains the flesh cell integrity, and 1.5% calcium lactate on the inhibition of tangerine respiratory intensity, the inhibition of MDA and increase the activity of SOD treatment has the best effect. Conclusion 2% chitosan treatment to increase the activity of POD had the best effect.1.5% chitosan treatment group of CAT activity was always higher than that of the control group, maintain higher activity of CAT, effectively control the accumulation of hydrogen peroxide, delayed the softening of the orange corruption, until the later period of storage, the activity of catalase tangerine stops rising, probably due to hydrogen peroxide enzyme (CAT) lost the normal physiology function, after long time storage, fruit internal metabolic disorder, no ability to timely cleaning tissues caused by hydrogen peroxide.3、The research on postharvest physiological characteristics of Longan Grapefuit. The experiment selected 1%,1.5%,2% of calcium lactate and 1%,1.5%,2% chitosan coating treatment,0.02%,0.04%,0.08% of clove oil and 0.02%,0.04%,0.08% bacteriostasis of cinnamon essential oil treatment. Through pre experiment and access to relevant literature, selected 1.5% chitosan coating treatment,1.5% treatment of calcium lactate,0.04% clove oil processing and 0.04% cinnamon oil processing as the final experimental concentrations. Through the experiment we can see, the hardness and water content of reaction the fruit quality characteristics in the later period of storage, with the extension of storage time Longan Grapefuit, its hardness, water content showed a downward trend, sugar and acid content, VC content, TSS content and cellulose content are relatively large changes occur, acid as breathing the metabolic substrate is continuously consumed, VC also to decomposition, TSS has been converted to soluble carbohydrates and pectin, into soluble pectin in the storage process of pectin, resulting in increased then decreased. The respiratory intensity decreased during storage, several treatment after the SOD. For a Longan Grapefuit quality index, fell 1.5% chitosan coating can effectively inhibit the fruit hardness, reduce the loss of reducing sugar, slow moisture content decreased, TSS content is stable.1.5% calcium lactate treatment can effectively reduce the content of total acids and VC. According to the different treatments on Physiological Indexes of storage pomelo show,1.5% chitosan treatment can reduce the respiration rate, and increase control of relative permeability of MDA content and cell membrane.1.5% calcium lactate treatment delayed the decline in antioxidant enzymes CAT, SOD and POD activity. The comprehensive quality and physiological indexes can be seen, calcium lactate 1.5% and 1.5% chitosan coating fresh-keeping effect on long Anyou best.
