The Serissa pear is delicious and nutritious which are provided by the middle of Feng Ming district of Ya'an in Sichuan province. Because of the shortness of transportation, storage conditions and the lack of fresh keeping methods, the properties of the pears were poor. Up to now, only few studies on the preservation of Serissa Pear were reported. From this research, Yaan Serissa Pear were used as materials. The Serissa pear were stored in 3.0 judg 1.0 DEG C,85%-90% RH and treated by different treatments of 1-MCP (0.45uL/L,0.9?L/L,1.8?L/L), ozone (30mg/m3,60mg/m3,90mg/m3) chitosan sugar (1.0%,1.5.%,2.0%), then tested the effects on the postharvest storage quality and physiological metabolism. The results are as follows:(1) three different concentrations of 1-MCP (0.45?L/L,0.9?L/L,1.8?L/L) treatment have a certain effect on the storage quality and physiological characteristics of Serissa pear. The most suitable concentration of 1-MCP 1.8?L/L postponed the respiratory peak of 15d, to 45 days, the respiratory intensity 12.1mg/Kg.h; to 105 days, the corruption rate 25.72%, maintaining the soluble solids content (TSS) in 10.4%, titratable acid (TA) in 0.044%, soluble sugar was 7.2%; inhibition on MDA rate at 9.7%, cell membrane permeability was 42.9%, keeping the peroxidase (POD) activity in the 0.025?L/L, on storage quality and physiological index of effect is the best.(2) of different concentrations of ozone (30mg/m3,60mg/m3,90mg/m3) treatment on the preservation of the results show that,90mg/m3 the ozone treatment of:delayed the respiration peak 15d, to 45 days, the respiratory intensity 12.5mg/Kg.h; to 105 days, the soluble solid shape contents (TSS) of 10.1%, titratable acidity (TA) was 0.037%, soluble sugar was 6.9%; in addition, inhibiting the pear MDA values in 3.17mmol/g FW and maintain POD activity in 0.023?L/L.(3) in three different concentrations of chitosan film (1.0%,1.5.%,2.0%) treatment, to 105 days,1.5% chitosan coating treatment can keep the fruit soluble solids content (TSS) was 9.8%, titratable acid (TA) 0.035%,6.8% of soluble sugar, fruit weight loss rate is only 3.31% and cell membrane permeability decreased to 49.1% and maintaining the POD activity in 0.019?L/LThrough three kinds of different preservation treatment, the most suitable methods were:1-MCP 1.8?L/L,90mg/m3 ozone treatment,1.5% chitosan coating treatment. In the three storage conditions, both during low temperature storage, was Serissa pear storage quality and physiological characteristics. Among them, the 1-MCP 1.8?L/L treatment was better than other ozone treatment and chitosan coating treatment.
