Food additives are substances added to food to preserve flavor or enhance its taste and appearance. They are used to improve the sensory properties of food, make the food more safe and convenient to keep. Their properties depend on their chemical structures. Hitherto, most of the food additives information system only can be used to do text or digit search. There is no report about information system of food additives with structure search function. The aim of this thesis is to construct a food additives information system, which will include the chemical structure, text and digit search functions. Through the system, we can understand the nature of food additives much better, from the point of chemical compound.MySQL, PHP and VC++were used to develop the food additives information search system. The system includes search functions as follows:chemical structure, CAS register number, additives code, compound name, food classification number and food name. The search result includes information about:chemical structure, CAS register number, additives code, compound name, food classification number, food name, the maximum level, scope of use, function, and the toxicity data. The information about structures is obtained from the SciFinder. The toxicity data is from the toxicity database of Accelrys and computer aided prediction systems of toxicities. The system is easy to use, and helpful for administration staffs to understand the relative rules of food additives. Also, it is helpful for researchers to develop novel compounds of food additives.
