Aflatoxin B1(AFB1) is a kind of chemical structure which is composed of two furan ring and coumarin compounds. As early as 1993 AFB1 is designated as class I carcinogen by the world health organization(who) agency for research. AFB1 is a kind of mycotoxin toxic,which threatening the health of human.The main contents of this study is to degrade or remove aflatoxins in peanut oil through adsorption.Natural montmorillonite as commonly used adsorbent has poor dispersion, high oil consumption, low removal rate of poison effect,this subject adopts Na-montmorillonite(Na-MMT) as raw materials, selects six kinds of organic quaternary ammonium salt as modifiers for improving its detoxifying efficiency of Aflatoxin B1(AFB1) in peanut oil in order to improve the oil-wet properties of montmorillonite, increase the stability of adsorption.This paper finally selected a adsorbent which has the best degradation effect.Both MMTs were characterized, the quality in peanut oil were also detected.In addition, the safety of peanut oil contaminated by AFB1 after being adsorbed was evaluated.1)Montmorillonite modified with Octadearyl dimethyl ammonium chloride(M1831) has the best effect of modification,the effect of degradation adsorbed by M1827 was the second,the effect of degradation adsorbed by M1827 was the last.The results of XRD and IR suggested partial ion exchange of native inorganic cations in MMT with 1831 occurred.When the ratio at 20% CEC,the M1831 has the best ability of adsorption.1831 was performed the best on intercalation and exfoliation the layer system which enlarged the d-space to 2.06 nm and lower the CEC to 72.1 mmol/100 g,while the the d-space of unmodified montmorillonite was 1.47 nm,lower the CEC to 139 mmol/100 g. The alkyl chain number, chain length and benzyl groups played different roles in the modified process.2)The main factors affecting the detoxification of adsorption were : the tempereture of adsorption >amount of M1831 > the time of adsorption.Investigation of AFB1 adsorption by M1831, at 150 r/min,the quality of 3.13%,53.79 ?,mixing time for 29.46 min,showed that adsorption of this toxin in peanut oil by M1831 was high(84.69%). Under these conditions,the concentration of AFB1 was degrade from 29.2±2.12 ?g / kg to 4.47±0.29 ?g/kg.The degradation rate of unmodified montmorillonite was only 79.3%.The aflatoxin concentrationof peanut oil after adsorption with modified montmorillonite was far below national standards of 20 ?g /kg(GB 1534-2003).3) Adsorption detoxification has little effects on the quality of peanut oil. After detoxification with adsorption, the L value(lightness) of peanut oil increased significantly(P<0.05), and more clear and transparent than that of the control. The acid values of peanut oil with M1831 adsorption for 30min(35 ?-75 ?) improved, which dropped from the initial0.85 mg/g to 0.42 mg / g(P<0.05). The peroxide values of peanut oil with M1831 adsorption dropped from 5.96 mmol/kg to 1.86 mmol/kg(P<0.05). The acid value and peroxide value of peanut oil with adsorption did not exceed the limit requirements of A class superfine fragrant pressing peanut oil of GB 1534-2003(acid value? 4.0 mg/g, the peroxide value ?7.5mmol/kg). The amount of oleic acid in peanut oil decreased from 33.32 ± 0.6 mg/100 mg to30.27± 0.8 mg/100mg(P >0.05), the amount of linoleic acid decreased from 28.5 ± 1.6 mg/100 mg to 26.4±1.7 mg/100 mg, the quantity of linolenic acid decreased from 0.12 ± 0.0mg/100 mg to 0.10 ± 0.0 mg/100 mg, the quantity of arachidic acid decreased from 1.3±0.25 mg/100 mg to 1.1 ± 2.4 mg/100 mg, the quantity of a peanut acid decreased from 1.5 ±0.39 mg/100 mg to 1.2± 0.58 mg/100 mg, The unsaturated fatty acids in peanut oil after being adsorbed were not significant changed(P> 0.05).During the storage of 90 days, the acid value and peroxide value of peanut oil with M1831 adsorbed were all increased significantly,the acid value of peanut oil adsorbed by M1831 increased from 0.45 mg/g to 0.79 mg/g, and the peroxide values increased from 2.64 mmol/kg to 4.33 mmol/kg. However, they were all far less than those of the limit requirements in GB1534-2003.4) The safety of peanut oil contaminated AFB1 after being adsorbed was significantly improved.The extract from peanut oil contaminated AFB1 after being adsorbed significant reduced the numbers of revertants in TA97, TA98, TA100 and TA 102 strains(P<0.05), and it had lost the mutagenesi for AFB1 in peanut oil refined with alkali at the optimal detoxification process. In addition, the activity of HepG2 cells reached to 96.81 %, which was insignificant differences compared with that of negative control(P> 0.05).
