It has a long history that using the leaves of fig for medicine.In recent years,research for its composition and pharmacological is more and more deep.Fig leaves are rich in soluble sugar, vitamins, amino acids and other nutrients, and contains coumarin, flavonoids, tannins and other active substances.It has the very high value of nutrition and health.At present, the fig is using for watching and eating the fruit.The precious resources of the fig leaf have not been fullyutilized.In recent years,with the continuous improvement of people's living standards, the demand for the type of health care product is increasing.In order to take full advantage of the Fig resource, Adding the variety of health care tea. Improve the economic benefits of the fruit tree planting, meeting the growing health care needs at the same time.In this paper,we use the fig leaf as a raw material,determining the appropriate processing way;Clearing the standards of the fresh leaves;Optimize the processing technology of the FIG leaf tea.Through the senses, the physical and chemical composition analysis and analysis of aroma components,The quality characteristics of the fig leaf tea were studied. The main results were as follows:(1)The fig leaves should adopt the way of no fermentation,The process is filming-rolling-drying.(2)There are two varieties of the fig which is mainly cultivated in shandong province, Qingpi and Blanric.Qingpi is more suitable for processing into a fig leaf tea.We choose the first leap on the new shoots in the spring and winter for the raw materials of the fig leaf tea.(3)We should remove petioles,keep veins and crosscut the leaf before processing.Filming have an great impact on the quality of the Fig leaf tree.Filming by microwave is the best way. The quality of the Fig leaf tea which is filmed by microwave for three minutes is the best one of all.The Fig leaf is larger than the fresh tea leaf.We can choose a variety of methods for rolling according to the need of the market,such as curl-shaped,grainy and block-shaped. We can also make it to tea bags and superfine powder.The methods of drying had a great effect on the quality of tea.We use the piecewise drying method,microwave preliminary dehydration 2 min,double-hung 120? fragment enhancer 120?.(4)The characteristics of the fig leaf tea quality characteristics:curly shape,colour and lustre is light green, aroma fragrance, rich lasting, looked yellow and green, clear and bright, fresh and pure taste, something like coconut, and bright green leaves.It conforms to the characteristics of the sensory quality of green tea, and have the requirements health care tea nutri-tion.
