Cyperus soybean is a kind of multi-functional economic crops with high quality and yield,high comprehensive utilization value. With the unceasing development of economy and people living standard,understand its nutritional value, scientific selection is the common pursuit of edible oils in today's society. Aqueous enzymatic extraction oil of Cyperus soybean oil is a method that based on the combination of mechanical and enzymatic effect,the cell wall of Cyperus esculentus L.degradation,which makes the oil release,The recycling of starch in sediment, can improve on the comprehensive utilization value of Cyperus soybean,saving the cost of production.The test with Cyperus soybean as raw materials,oil extraction yield as research target.Optimized the Extraction process of aqueous enzymatic extraction of Cyperus soybean oil.Through the Filtering, distribution of a variety of enzymes, determine the Alcalase is the best.Then use the factors rotation method,optimize the Enzymatic hydrolysis conditions of Alcalase.The results show that,when the enzyme consumption 1.0%(w/w),solid-liquid ratiol:4 (g/ml), pH 8.0, temperature 50?, reaction time 6h, The extraction yield of Cyperus soybean oil is the highest,82.97%.1.Study the effect of ultrasonic on extraction rate of Cyperus soybean oil,the best ultrasonic conditions were as follows:reaction time 10 min,temperature 40 ?,ultrasonic power 150 w.2.On the basis of single factors, the enzyme consumption,hydrolysis time, reaction temperature, pH value were selected as independent variables, the oil extraction yield as the response value, according to the center composite Design, using the software Expert Design8.0 Trial design the test, optimization enzymatic hydrolysis, the quadratic polynomial regression equation between the enzyme consumption(A),hydrolysis time(B), reaction temperature(C), pH value(D) was obtained: E=-1699.82750+41.1500A+25.72600B+5.39450C+377.91200D+0.68750AB-0.067500AC-5.02500AD-0.010500BC+0.29000BD+0.038000CD-2.15258B2-0.053188C2-23.11033D2Through the equation, the best conditions for extraction of Cyperus soybean oil is obtained as follows:the enzyme consumption 1.2%(w/w),reaction time5.87h, reaction temperature 51.04?, pH 8.20. The experiments had been done according to this condition, the average result of the extraction yield of Cyperus soybean oil got from the parallel three times experiments was 87.1381%, Agreement with the predicted value.3.Using GC4000A determination the fatty acid composition of Cyperus soybean oil,the results show that unsaturated fatty acid content is over 80%, oleic acid 71.49%, linoleic acid 10.86%,palmitic acidl5.18%, stearic acid 1.81% and linolenic acid 0.34%.4.Recycling the starch in sediment after the oil extraction,determine the basic physical and chemical properties of Cyperus soybean starch.According to the results Cyperus soybean starch typical secondary swelling starch, belong to limit inflation starch; And branched chain starch content is much higher than direct starch; the Starch has strong ability of gel formation, In the low temperature environment,the starch is moren easy to aging.The Gelatinization temperature of Cyperus soybean starch is 85.4?, difficult to past. The sugar has little influence on the viscosity of Cyperus soybean starch, but the influence of salt on the viscosity of Cyperus soybean starch is significant.
