Trans fatty acids(Trans-fatty acid, referred to as TFA) refers to a molecuLe containing one or more trans(trans) non-conjugated double bonds of unsaturated fatty acids in general, the presence of a small amount of trans fatty acids in infant food, it may be a major source of ruminant meat and dairy products, hydrogenated vegetable oil and vegetable oil refining deodorizing channels.Studies have shown that Trans fatty acids on the human body may have the following hazards: essential fatty acids interfere with the metabolism lead to cardiovascuLar disease, resuLting in a woman infertile, block fetal nervous system and children, affecting the growth and development of infants and young children.In this paper, infant formuLa milk powder and grain flour as the main object of study, to explore the optimum extraction of fatty acids in infant food in trans fatty acids to optimize muLti-component analysis of the conditions established on the basis of infant food by gas chromatography- mass spectrometry conduct research associated with analytical methods, and Jiangxi infant cereal powder content level.This paper main work and conclusions are as follows:1?To study the optimum infant foods in fat extracted. For infant food characteristics, using different methods comparison, selection and optimization of conditions, statistical analysis, the best way to establish the infant food fat extraction: the enzymatic- hydrolysis of ammonia- ethanol- petroleum ether extraction method of fat.
