To study the changes of the main chemical composition and the effects of different materials handling to cigar-wrapper,we planed the test at Danzhou City of Hainan province in 2015.1 Effect of the main chemical composition changes and the quality of cigar-wrapper during the initial fermentation.(1)In the initial fermentation the total nitrogen content continued to decrease,especially during 24d-30 d.And the reduction rate slowed and stabilized;The Nicotine content changed little;The total sugar content in fermentation before 12 d decreased rapidly,from1.8% to 0.81%,then it remain stable basically;The chlorine ratio of potassium to a maximum value of 5.22 and a minimum of 3.42;The ratio of sugar to nicotine and the ratio of nitrogen to nicotine is lower than flue-cured tobacco,and the ratio of about 0.25 and 1.1,respectively.Besides,the ratio of sugar to nicotine and the ratio of nitrogen to nicotine declining,nitrogenous base was stable,but it doesn’t in the rage of good cigars(3-4).Then we should reduce the nicotine content and improve the alkali nitrogen,make more coordination in tobacco leaf chemical components.(2)The size relationship of the alkaloid content of cigar-wrapper was nicotine >anatabine >nornicotine > anabasine.Nicotine content of alkaloids in the proportion of about 83%.At the early stage of the nicotine content increased,and content up to 3.87%,then slowly lower,after fermentation nicotine 0.78% lower than at the beginning of fermentation.(3)The content of volatile organic acids of cigar-wrapper were few,while the mostly was non-volatile organic acids.Non-volatile organic acid in malic acid,oxalic acid,citric acid content is the highest.The changes citric acid and malic acid content and total organic acids agreement.The trend showed a single peak.After fermentation 18 d,malic acid content decreased rapidly and then stabilize.Citric acid fermentation 18 d to 30 d in its content decreased slowly,then quickly dropped to the fermentation 84.99mg/g.Oxalic acid was first reduced and then increased and then decreased,peaking in the fermentation 30 d.Initial fermentation process nonvolatile organic acids increasing proportion of the total from 91.91% to 69.50%,higher unsaturated fatty acids is decreasing.(4)In the initial fermentation process,the aroma components size relationship was: neophytadiene﹥carotenoid degradation products﹥cypress alkane degradation products﹥phenylalanine degradation products﹥browning reaction products;Neophytadiene total aroma about 70% of the material,the total amount of the change trend wax consistent trend aroma single speak,fermentation 24 d when the total amount of tobacco aroma substance highest,then decreased.2.Effect of different materials handling to the main chemical composition changes and the quality of cigar-wrapper after initial fermentation.(1)After the initial fermentation,the performance of total nitrogen and nicotine tobacco of different material handling was chrysanthemum handling(M1)﹥water handling(CK)﹥green tea handling(M2)﹥rice wine handling(M3).The content of total nitrogen and nicotine were increased with M1 treatment;While,M3 declined significantly lower nicotine;The performance of the content of sugar as follows:M1﹥M2﹥M3﹥CK.Compared with CK,the content of total sugar of this three treatments were increased significantly.The highest of the ratio of sugar to nicotine was M3;M1 has the highest of the ratio of nitrogen to nicotine,while M3 has the lowest.The highest of the ration of potassium to chlorine was M3,then was M1,and this two treatments were higher than CK.It showed that the cigar leaves would improve the combustibility by M1 and M3.(2)Compared with CK,the nicotine content of M1 and M2 was increased significantly.The content of nornicotine of M3 was significant,an increase of 0.26% with the CK.The nornicotine of M1 and M2 were few.As can be seen from each of the total alkaloid proportions,the content of total alkaloid increased significantly by M1 and M2.M3 could reduce the nicotine content.(3)The effects of different material handling to the content of organic acids as follows: the content of malic acid was increased significantly by M3,and M1 could reduce the citric acid content.The effects of this two treatment were remarkable,and were good for improve the quality of cigar-wrapper.(4)The effects of different material handling to the content of neutral aroma as follows: The performance of the content of neophytadiene was that:M3﹥M2﹥CK﹥M1;The phenylalanine converted products content was increased significantly by this treatment,and the size relationship was that M3﹥M2﹥CK﹥M1;The solanone content was reduced;Carotene degradation products amount relation to M2>M3>M1>CK;All in all,the neutral aroma of cigar-wrapper was increased by this treatment.(5)It is good for the sensory smoking quality of tobacco leaves by the three treatment.It is showed that: mixed gas and irritation were decreased,cleanliness and sweetness had been improved,combustion and gray had been improved,which M3 was best.
