At present, carbonated beverage production in our country are into the stage of rapid development, public demand for carbonated beverages are more increasing.Throughout the whole carbonated beverages production process,it is essential for controlling the sugar content and carbonation process. However,in the carbonated beverage production process, there are many factors that affect the sugar content and carbonation levels. In order to improve the accuracy of carbonated beverages and carbonated Brix degree, promote the development of the beverage industry. After literature survey, this study program conduct a number of experiments to explore the analysis methods to solve these problems.First,we explore the factors that affect beverage Brix. From the point of view of drinking water, the water temperature has a great influence on the dissolution of the syrup, the amount of dissolving syrup will change with changes in water temperature.Secondly, from the perspective of the syrup, the syrup storage time, temperature and acidity will have an impact on its dissolution.Since under certain conditions the sucrose will transform into fructose and glucose, the conversion process will be affected by the temperature and acidity, therefore it is critical to control temperature and acidity levels.Secondly,we explore the factors that affect beverage carbonation, that factors affecting the dissolved carbon dioxide.First, during the degassing,if exits poor deaeration phenomenon, and the presence of residual air in the solution, will affect the subsequent dissolution of carbon dioxide, lowering the amount of dissolved carbon dioxide.Secondly, the cooling system after the process of mixing the syrup,if the temperature is inappropriate, can also affect the dissolved carbon dioxide.Third, after the process of carbonation, all the carbonated beverages will be stored in a can,if there is an improper storage pressure, will also affect the dissolved carbon dioxide.Through the above experiments, this study identified the factors influencing sugar content and carbonation levels during carbonated beverage production process, and optimized control conditions aimed at making theoretical and practical support to solve the above problems and to optimize the production of carbonated beverages.
