According to the phenomenon of weaking quality style,poor combustion,poor overall quality of the sun-cured tobacco called Kadsura coccinea of Guangchang,a series of studies were carried out.In this paper,the effects of stacking hour and curing system on physiological characters and quality of Sun-cured red tobacco called Kadsura Coccinea of Guangchang were studied.The results as follows:1)During the curing period,the moisture content lost slowly at the beginning of curing,then fast until the end of curing.Different curing system have obvious influence on the curing time and water loss rate of tobacco leaf,in the traditional curing system,water loss rate of tobacco leaf is slowly,curing time is the longest;Drying combined with air curing and the sun-cured accelerate the removal of moisture of tobacco leaf,shorten the curing time,the time of the sun-cured is the shortest.2)Amylase activity decreased during the curing process,as well as the rate of degradation of the pigment and starch.The activity of lipoxygenase showed a trend of first rising and then falling.There were significant differences in the rate of degradation of the pigment and starch in different curing system,as well as the activities of lipoxygenase and amylase.In the traditional curing system,the activity of the lipoxygenase and the amylase is lower,chlorophyll,carotenoid and starch degrades more slowly.The activity of the lipoxygenase and the amylase is relatively high,chlorophyll,carotenoid and starch degrades more rapidly,especially in the sun-cured,the degradation of chlorophyll,carotenoid and starch was the fastest,and the degradation was the most thorough.3)The sugar content and polyphenol content of tobacco leaves showed a trend of decrease during the curing process.Compared with the traditional curing system,the sugar content and polyphenol content of drying combined with air curing and the sun-cured were increased,especially in the sun-cured,the content of sugar and polyphenol was the highest.4)During the curing period,the content of NNN,NAB,NNK and NAT of the traditional curing system were increasing,the other four treatments were increased first and then decreased.Compared with the traditional curing system,the content of TSNA in tobacco leaves was decreased,and the security of tobacco leaf was improved in the drying combined with air curing and the sun-cured.5)The activity of SOD,POD and CAT showed a trend of first increasing and then falling,while the content of MDA was increasing.Compared with traditional curing system,the activity of SOD,POD and CAT in tobacco leaves was higher,and the accumulation of MDA was lower in the drying combined with air curing and the sun-cured.6)Different curing system have obvious influence on quality of tobacco.Compared with the traditional curing system,prolong the drying time,the sugar content and the ratio of sugar to nicotine in tobacco leaves were increased,the chemical composition of tobacco leaves was coordinated,neutral aroma compounds were increased,the sensory quality of tobacco leaves was improved,the highest sensory quality of tobacco leaves was in the sun-cured,followed by the tobacco leaves during the period of yellowing stage and red period of drying,dry period of air curing.7)The results of the study on the stacking hour shows that increasing the stacking hour properly,it was beneficial to reduce the water loss rate of tobacco leaf and the accumulation of MDA,increase of the activity of lipoxygenase,amylase,CAT and SOD.The constituents of macromolecules such as pigment are degradated more fully after upper leaves heaping 2-3days and middle leaves heaping 1-2days,which promoting the formation of aroma components,improving the physical characteristics and the smoking quality.
