Food is necessity for our life. The quality and safety issues of foods are receiving the wide attentions with the development of computer network technology and Information dissemination channels change. In this paper, a two-dimensional fluorescence correlation spectroscopy technique based on LED is proposed for food quality detection, and the spectral information of the second dimension can be obtained by changing the height of the LED illumination as the external disturbance.Combined with the requirements of business, the feasibility of application, we build a low-cost, compact, high degree of automation, based on LED excited two-dimensional fluorescence correlation spectroscopy detection system., and the system was used to study the West Lake Longjing tea with different quality. We collected two dimensional fluorescence spectra of different teas through this system, and made a qualitative and quantitative analysis of the spectral data. For qualitative analysis, the two-dimensional synchronous and asynchronous correlation spectroscopy energy contour map have a higher distinguishing ability of different teas compared with one-dimensional spectral. For quantitative analysis, three kinds of classification and prediction model, multiple linear regressions, KNN (k-nearest neighbor), BP artificial neural network have very stable and accurate forecasting results. The experimental results show that the two-dimensional fluorescence correlation spectroscopy system based on LED has a good application prospect.
