Food additives played an important role in improving color, aroma, taste of foods, adjusting the nutritional structure, extending the shelf life of foods. They were indispensable materials in food production. Their usage shall strictly comply with national standards of using food additives, and excessive dose of food additives or abuse of illegal additives will cause harm to health. Detection and monitoring of food additives in food production can hardly do without development of reference material. Therefore, N-Acetylneuraminic acid, Alitame, 2,4-Dichlorophenoxyacetic acid and Forchlorfenuron were developed as reference material in this study, and the quantitative methods were carried out for three of them. According to the national development process of reference material, the purification, preparation, qualitative analysis, uniformity and stability were executed. The results will provide the standard for the determination of additives in food and be a template for the detection of the other reference materials.The reference material of N-Acetylneuraminic acid was developed with the above 98% purity and 0.12%(k=2) expanded uncertainty. A quantitative method of Ultra High Liquid Chromatography-Mass Spectrometry was established for detecting the content of N-acetylneuraminic acid in poultry eggs. The results fill in a gap which has hitherto existed in the detection of poultry and egg. The contents of N-acetyl neuraminic acid in six kinds of eggs were in the range of 0.1~43.6 ?g/g. The hydrophilic High Herformance Liquid Chromatography was used to detected the content of N-Acetylneuraminic acid in bird's nest. It overcomes the disadvantages of shorter retention of N-Acetylneuraminic acid and easy to be interfered by impurities disturbed by impurities in reverse chromatography.The reference material of Alitame reference material was developed with the above 98% purity and 0.58%(k=2) expanded uncertainty. A quantitative method of Ultra High Liquid Chromatography was established for detecting the content of Alitame in soft drink. The results show that the interference of impurities can be greatly reduced and the detection sensitivity can be improved by using the solid phase extraction pretreatment method.The reference material of 2,4-Dichlorophenoxyacetic acid was developed with the above 99% purity and 0.86%(k=2) expanded uncertainty. A quantitative method of Ultra High Liquid Chromatography was established for detecting the content of 2,4-Dichlorophenoxyacetic acid in fruits and vegetables. The ratio of the dispersed solid phase extraction and purification agent was optimized. The results were compared with that of the traditional solid phase extraction method.The reference material of Forchlorfenuron was developed with the above 99% purity and 0.72%(k=2) expanded uncertainty. The results can be a standard validation for the detection of Forchlorfenuron in fruits and vegetables.
