This thesis has mainly aimed at the energy conservation,environmental-protection,clean fermentation and the improvement of economic benefit.It has studied the effect of the technical condition and technical parameters of compound amylase in the applied process of ethanol fermentation with high concentration on fermentation indexes,and the influence of the compound amylase in the process of recycling use of clear liquid on the fermentation quality.This thesis has more deeply analyzed the effect of such parameters as liquefaction temperature,time,pH value and the amount of liquefying enzyme in the gelatinization and liquefying viscosity,so as to conclude the reasons of the advantage of the compound amylase in the production application.It has made the comparative study in the difference of the effect of compound amylase and ordinary liquefying enzyme in the quality and viscosity of saccharification liquid in the process of gelatinization and liquefaction of the mixed liquor.It has adopted the method of the single factor experiment to investigate the changing laws of the influence of different pH values,different types of amylase,and different additional amounts of amylase on the viscosity of mixed liquor in the liquefying process,the contents and changing conditions of glucose and maltose in the final stage of liquefaction,and the effect of different types of liquefying enzyme in the results of fermentation.It has decided a certain amount of producing raw materials of Henan Tianguan Fuel Ethanol Co.,Ltd as the basic proportioning of raw materials in the test in which the flour are made into from the wheat in the flour-making workshop,liquor A and liquor B are extracted from vital gluten by vital gluten processing workshop as the final composition of the wheat with a proportion of 50%,the corn are made the treatment of degerming and oil manufacturing with a proportion of 30%,and the cassava are directly smashed into pieces by the crushing workshop with a proportion of 20%.The experimental result shows that it has made the relevant material concentration in the condition of about 14%(v/v)alcoholic strength as the study objective.In terms of different pH values,especially in the condition of pH 5.4,it has lower viscosity in the liquefying process is 43 lower than that in the condition of pH 4.9;In different additional amounts of amylase,with 11 units of additional amounts,it has higher viscosity in the liquefying process and in the end of liquefaction the viscosity value is 106 higher than that in the additional amounts of 14 units,In the contrast of the contents of glucose and maltose;In the fermentation experiment it has concluded that during the fermentation process of mixed raw materialsand in the condition of pH 4.9 and pH 5.4,each fermentation index of the compound amylase shows a certain advantage;As with fewer additional amount of liquefying enzyme than that in other conditions.The creative contribution of this thesis is in the pretreatment to use the compound amylase into the mixed liquor of low pH value,so that the mixed liquor of low pH value made after the recycling use of clear liquid can directly be applied into the alcohol production.This method can sharply decrease the pH value of liquefaction and gelatinization of saccharification liquid;reduce the application of ammonia water or sodium hydroxide in the manufacturing process,and at the same time save the use of sulfuric acid in the saccharification stage.And it has the good effect of liquefaction,saccharification and fermentation which is easy to popularize.
