Gravity Ethanol Fermentation with its alcohol industry workers to improve theefficiency of fermentation improves equipment utilization, reduce energy consumption, and reduce wastewater emissions and many other advantages. Alcohol production andraw material pretreatment link is the basis of processes of fermentation alcoholproduction process, every step of the process after the ability to better have a significantimpact. Fermentation alcohol production process, raw material processing chain (rawmaterial crushing, starch cooking liquefaction)40%of the energy consumption of totalenergy consumption. Pretreatment link gravity fermentation process raw materials forresearch and optimization is of great significance. In this thesis, using tapioca as raw material for alcohol fermentation test.Process parameters on the liquefaction process (the tune jiangshui temperature, addwater than two amylase mixed amount of liquefaction time) on the impact of cassavamash viscosity, liquefaction effects and fermentation effect was studied to determine thebetter liquefied process: tapioca40mesh screen, adjust the precipitation temperature of50°C water than2.35, the high temperature α-amylase8U/g of raw materials, temperature amylase U/g, raw materials, liquefied for60min in the liquefactionconditions mash of iodine seized colors red sauce, starch liquefaction completely lowerthe viscosity of the mash, reducing sugar, appropriate follow-up glycosylated to teach asmall loss of total sugar. By adding150U/g of raw materials glucoamylase,60℃forsaccharification1h by adding0.12×10~8cells/mL active yeast, and60h offermentation. In this process, the starch completely liquefied mash viscosity much lowerthan plus water ratio of2.87controlled trials mash viscosity, the loss of total sugar, ethanol production to the44.3mL slightly lower than the control test, the alcohol contentof the mash15.28than controlled trials to improve by1.34%, the starch utilization ratewas90.5%residual sugar, residual reducing sugar and volatile acids in line with therequirements of clean production.Production of alcoholic fermentation, energy saving analysis. Through thecalculation of the cooking process of alcoholic fermentation, a number of ways toreduce the energy consumption of cooking links. Add water ratio decreased from3.4to2.2, saving approximately31.2%of the steam, mash decreased by approximately34.1%,increase the production capacity of more than30%; raw clinker heat exchanger temperature from50°C to90°C, saving about78%of the steam; filtrate reuse, reducerow of bad fluid volume; jet liquefaction, and to reduce the steam consumption.
