Porphyra yezoensis is algae in Chlorophyta,riching in polysaccharides,proteins,taurine,vitamin A(carotene),B,C,E,calcium and iodine and other ingredients.In this paper,P.yezoensis is as the research object,through studying the processing of Porphyra yezoensis,and the quality of wet P.yezoensis with different moisture,and the compatibility and sterilization technology of wet P.yezoensis with different seasoning to determine the wet P.yezoensis processing technology.The related research provide the experimental basis for the further development and effective utilization of P.yezoensis.This paper firstly studies the protein,polysaccharide,fat,crude fiber,ash,amino acid,iodine and other nutrients content of P.yezoensis with different picking period,and compares the fluctuation of P.yezoensis nutrients with different picking time.The results showed that P.yezoensis is rich in nutrients,with the increasing in picking times,proteins,polysaccharides,fat,crude fiber,ash content was increasing status.Seaweed iodine content and the flavor amino acid content of glutamate and alanine were highly waveform changes,and the content reached a maximum in the fourth crop picking.The iodine content of P.yezoensis was up to 45 mg/kg(dry basis),the flavor amino acids accounted for 36.83%of the total of 18 kinds of amino acids.The relationship between water content and water activity and microwave sterilization technology for wet P.yezoensis suggests that P.yezoensis moisture content and microwave processing time has a significant impact on the microwave sterilization time 20 s,microwave sterilization was best.Compared with conventional heat sterilization,microwave sterilization had short sterilization time,good bactericidal effect,and less nutritious seaweed material damage.In the disinfection power 750 W,sterilization time 20 s,the six months after sterilization,total number colonies of wet P.yezoensis(moisture content 18.8%)was 25 CFU/g,pathogenic bacteria was not detected.
