Capsicum red pigmen can be widely used in various industries.But because of its hydrophobic strong,the application in the food industry is restricted,so this experiment by emulsified and microemulsifying to improve its water-soluble,and thus can be applied to food products and expanded its scope of application.It carries the absorbance of the comprehensive analysis and evaluation to optimize process condition.Taking the absorbance as the index,Box-Behnken optimization design was conducted to the further research based on the results of single factor experiments of preparing the emulsion,namely,the emulsification time t1,emulsifying temperature,shear speed.The experimental results indicated when the emulsification temperature is 50.92?,emulsifying time t1 is 30.31min,the shearing speed is 14200.98r/min,the absorbance is 0.853 and emulsifying effect is the best and the emulsion is the most stable.It carries the microemulsion area of the comprehensive analysis and evaluation to optimize process condition.Taking the microemulsion area as the index,Box-Bchnken optimization design was conducted to the further research based on the results of single factor experiments of preparing the microemulsion,namely,the Km,emulsifying temperature,surfactant content.The experimental results indicate when the emulsification temperature is 51.69?,Km is 3.29min,the surfactant content is 10.19g,the microemulsion area is 1389.16.Color value of emulsion and microemulsion emulsions were 46.63 and 36.73;viscosity were 167.67mPa·s and 5mPa·s;refractive index were 1.336 and 1.577 respectively;effective diameter were 159.7nm and 66.1nm,and microemulsion conductivity was 60?s/cm.The red pigment emulsions and microemulsions were centrifuged 30min,speeding of 5000r/min,but emulsion had partakers phase phenomenon and there was no stratification capsanthin microemulsion situation.The stability of the capiscum red pigment products were also studied in this paper.The results showed that the products were sensitive to light and resistant to heat and acid.Na+,K+,Ca2+,Zn2+ and Mg2+ had little impact on them,Cu2+?Fe3+?Fe2+ make pigment precipitate and color changes.Adding capiscum red pigment emulsion and microemulsion to medlar juice beverage color is good.
