The wine is not only a special drink,but also a kind of culture.Involved in different people’s diet,culture,religion,economy,etiquette,and other aspects of life,and is closely related to the quality of life of the people.To a certain extent,It shows the country’s level of economic development.The liquor is one of the world’s six Distilled liquor.In the world,there are different kinds of distilled spirits,the six continents have production.But they are different because of the local resources,environment,ethnic customs.A long time ago,the working people in ancient China have mastered the brewing technology.Our unique qu,harmonic blending technology makes Chinese liquor has its own unique style and taste,the other foreign distilled liquor can not be compared.The new production of liquor has spicy,burst,strong irritant,miscellaneous flavor.It requires brewing for some time,then it will taste good,the quality will be high.But the natural aging is time-consuming,taking up plant and equipment,high costs and affecting the enterprise capital turnover,It is very unfavorable to the development of wineries.So how to brew high-quality wine in a short time attracted the attention of many people,but also the future direction of development of the liquor industry.The experiment provides a reference for the aging of liquor,which aims to shorten the storage time of liquor,and to remove the occupation of the plant and equipment,which is of great significance to the development of the liquor industry.The experiment choosed the represent Chinese liquor-Fen Liquor as experimental material,with metal elements Fe2+,Cu2+,K+ in the form of ferrous acetate,copper acetate,potassium acetate was added to the new form of wine and wine for two years to carry on experiment.We Plan to added copper acetate 30μg/L、40μg/L、50μg/L;ferrous acetate 30μg/L、45μg/L、60μg/L;potassium acetate 25μg/L、75μg/L、125μg/L for 3 months,6 months,9 months.Study the function of Cu2+,Fe2+ and K+ in the aging process of Fen Liquor.And to explore the change roles of the following 13 kinds of metal ions such as K,Cu,Mn,Ca,Fe,Ni,Zn,Cr,Pb,Na,Mg,Cd,Li content in the storage of Fen Liquor.And the effects of 3 metal ions(Cu2+,Fe2+,K+)on viscosity,conductivity and pH value.The result shows that adding a certain amount of acetate in the wine for 3months、6months、9months.In experiments of wine samples,from the analysis of each sample,the result shows in the proper range of Ferrous acetate,Copper acetate,Potassium acetate,the metal elements which are beneficial to wine quality,most of them has increased.viscosity,electrical conductivity increased with added ion concentration increases.pH decreased with added ion concentration increases.This conclusion has a certain significance to explore the colloidal solution of formation and behavior of the aging of white wine research.
