High-frequency alternating electromagnetic field is an electromagnetic field of high-speed alternating polarity generated by flow through of high-speed alternating electricity in conductor.It has been used in various applications.The material produced during the liquor-making process is not only ethanol.Aldehydes,esters and other substances on the quality of wine,taste and so on a great impact.These edements affect the taste of liquors very much.Esters give liquor aroma and soft taste.But aldehyde has great toxicity,will lead to headaches and other symptoms of alcohol discomfort.When liquor is in the making through natural aging,aldehydes turn into esters and other aromatic substances,while the taste of liquor will become soft.The new making liquor need a certain period of time through the storage to maturing.The length of the maturing period will greatly affect the production costs of liquor.How to effectively promote the rapid aging of new wine,to mellow taste,to reduce the Treasury,containers and other production funds backlog,reduce production costs.This is an important issue to improve the economic benefits of liquor production enterprises.In order to solve the problem of benefit decrease caused by long storage for improve liquor quality,shortening the maturing time has become the main way for the liquor-making enterprises to improve the quality of liquor and reduce the cost.This process is called the aging.In this paper,I designed the HF alternating electromagnetic field liquor ager.The ager can generate special HF alternating electromagnetic field on liquor,and the HF alternating electromagnetic field can make the aldehyde magnetization in high frequency.The aging process speed up the esterification,condensation and a series of reactions,increase the content of flavor substance such as ester and alcohols,make liquors more mellow and soft,and reduce dizziness and headache.The main contributions of the paper are summarized as follows:1,Research,design and realize HF alternating electromagnetic field liquor ager,including the power module,HF oscillation module,and the control module.Study and selected the specific components of modules through a detailed description of the working procedure of these modules,.2,Based on the design of the liquor ager,two kinds of high-degree liquors and two low-degree liquors which is common in market is chosen as test material(There are 56 °Niulanshan Erguotou,53 ° Langjiu,38 ° Yanghe Daqu and 38 ° Luzhou Laojiao.These four kinds of liquors represent high-level and low-level,high-degree and low-degree,and different regions characteristics.).In the certain oscillation frequency condition,Analyze the elements of the liquor sample before and after aging by gas chromatography,Analyze the data,and make a comparative analysis of the experimental results.1)Explore the effect of the different aging time on liquor aging by experiments;2)Explore the effect of the alcohol strength and volume on liquor aging by experiments.Ascertain the aging time of the liquor ager through the experiments.3)Finished the aging test on Cabernet Sauvignon wine,normal dry red wine,vodka,whiskey,brandy,tequila,gold wine,white rum,beer,rice wine and plum wine.Through the sensory evaluation,explore the effect of the aging time on the quality of wine.4)The paper also design HF alternating electromagnetic field liquor ager for the liquor-making industry by the need of liquor-making enterprises.In view of the industrial use,the paper analyzes the liquor ager and makes a detailed series of improvement measures.
