Rice wine as a unique wine species in China,has a long history,and with the quality of life and consumer attitudes,the demand for rice wine is rising.At present,the production of rice wine fermentation process is still the majority of workshop-level fermentation and manual mode of operation,relying on manual and experience of rice wine production and fermentation process control,product quality and batch stability is poor,the development of automation and enhance product quality has become Rice wine industry issues of concern.In this paper,the production quality and safety of rice wine were researched according to the phenomenon of non-linearity,time-varying and robustness in the process of production and fermentation of rice wine.The fermentation process was forecasted and controlled in real time,To improve the food quality and safety of rice wine and production automation,improve production efficiency.In this paper,the whole process of production and fermentation of rice wine was studied,and the HACCP system was brought into full play.The proper quality control system of rice wine production and fermentation was established according to the actual production process of a rice wine company.The hazard point and key control points of the fermentation process were analyzed and determined,And the critical limits of the key points were analyzed and analyzed.Finally,a suitable HACCP plan was developed,and the characteristics of the HACCP system prevention were taken into account.Based on the dynamic uncertainty of parameters such as temperature and alcohol content in rice wine fermentation process,fuzzy control algorithm and alcohol prediction model based on fuzzy-neural predictive model were designed.According to the characteristics of premature fermentation process,the temperature and alcohol degree were controlled,and the system was simulated and verified by simulink in MATLAB.Combined with fuzzy-neural network for forecasting scheme,the accuracy of temperature control during the fermentation of rice wine is improved.When the predicted value of current fermentation is abnormal,it can be predicted in advance,and the corresponding measures can be made in advance to guarantee the qualified rate of product.And quality,reflecting a better control effect.Combined with a rice wine company's actual production process of rice wine,designed based on MCGS and intelligent sensor of the rice wine fermentation control system.Real-time monitoring and control of parameters such as temperature and alcohol degree,on-line monitoring of production process,real-time data,historical data query and fault alarm are realized in the system.The real-time monitoring of the quality of rice wine on the real-time basis can guide the actual production of fermentation process,which has important practical production significance.
