Beer industry is growing fast and has become an important part of the food industry in our country.But it lags behind the advanced foreign manufacturers that no matter production automation level or product quality,because the domestic beer industry started later.Beer fermentation is the most important part of the whole production process.And the temperature control is extremely crutial through the process.The temperature control accuracy in the process of fermentation could directly affect the beer quality.The variable universe fuzzy PID controller presented in this study has focused on the fermentation process characteristics of large inertia and lagging,time-varing etc.,and improved the accuracy of traditional fuzzy PID controller of which the precision is limited by fixed universe.The universe scaling factors has been introduced in this paper to adjust the universe input and output of the controller,which has avoided the control error caused by choosing inappropriate universe,solved the conflict between control precision and and the number of fuzzy rules,and improved the control speed and accuracy of the fuzzy PID controller.The MATLAB simulation has verified the presented controller could meet the control requirement of China's beer production system well.In addition,the PID neural network controller has been designed and simulated to solve the larger "coupling" problems of temperature in future fermentation process.The simulation result has shown that the designed controller has fused the function of control and decouple with the features of fast response,high precision and strong stability.And the presented controlled could not only improve the precision of beer fermentation temperature,but also effectively overcome the interference of uncertain factors in the process.At last,the MCGS configuration software is adopted to complete the monitoring system of beer fermentation process.The data communication between the MCGS and MATLAB7.11 was established by OPC technology to implement the control algorithm and real-time data acquisition.Finally the feasibility of the design for the temperature control in the fermentation process is validated through the simulation.
