Barley(Hordeum vulgare l.)is one of the oldest crops in our country,second only to wheat,rice,maize of the planting area,the fourth largest in the world.Barley contains abundant nutrients,its nutrients conform to modern nutrition demand of "three high and two low",namely:high protein,high vitamin,high fiber,low sugar,low fat.At present,many countries in the world research on barley health and medical shows that:barley is nutrient-rich,but also has a good medicinal value.After germination,many kinds of enzymes of barley were activated and synthesized,nutrition facts changed,and the content of gamma-aminobutyric Acid(GABA)increased significantly.GABA is compound by GABA shunt and GAD activity limited the main rate.GAD activity was improved and GABA enriched under the condition of low temperature joint and oxygen stress environment.In this article,the main physiological indexes of barley germination were studied,optimized the best project of GABA enriched by Using the low temperature and low oxygen stress,optimized the best project of solid beverage,which was processed by the main material of germined barely flour and fresh ginger flour.The specific studies are as follows:(1)Gradually with the barley germination,barely nutrient consumped and functional ingredients enriched,respiratory rate,bods length,soluble sugar reducing sugar,amino acid,were increased and dry matter,soluble protein were reduced.albumin content was increased andprolamin,glutelin,globin content were decreased.GABA content was increased along with GAD activity,the third day of germination process,GABA maximum 53.56 mg/100 g FW,increased 27.86%than 0 days.(2)On the basis of single factor experiments,GABA content was increased first and then decreased along with GAD activity gradually with the germination time,temperature and oxygen concentrate.Response surface method is used to optimize the cultivating process of barley germination temperature,culture time and oxygen,the best culture conditions was 14?,17%oxygen concentration training 36 h,at this time the amount of enrichment of GABA up to 88.74 mg/100 g.The predical value was similar to tha actual value.So,low temperature and low oxygen stress are contributed to GABA enrichment.(3)On the basis of single factor experiment,soluble solid content evaluation index,optimized the best extraction process of barley sprout is:solid-liquid ratio of 1:20,leaching power is 150 w,the temperature of 60 ?,time for 30 min,and the soluble solids content is 8.34 g/100 ml.After homogenizing,raw material and ginger powder for 6:4,auxiliary materials added amount to the amount of raw material powder(100%)as a benchmark,dextrin 25%,citric acid 0.5%and SPSS 4%,xylitol 20%.That is solid beverage.
