The world health organization defines the elderly as people over the age of 60.With the change of body function and morphology,the elderly people have special requirements for food nutrition.In order to adapt to these changes,we can provide conforms to the elderly in the diet to the development of the body balanced nutrition,for the elderly health and longevity of an important guarantee.Ginger contains a variety of beneficial to human body nutrition elements,such as amino acids,gingerol,sugar,calcium,phosphorus,iron,zinc,lipids,etc.,have promote digest,enhance immunity effect and so on,especially for middle-aged and old have good health care function.This experiment by laiwu ginger as raw materials,adding material such as red date,honey and black tea by single factor experiment and orthogonal experiment,using descriptive analysis of sensory evaluation method,developed a series of suitable for middle-aged and old people nutrition health care ginger compound beverage and the optimum process recipe,the results are as follows.Ginger extraction optimum technological conditions for: ginger with pure water and solid-liquid ratio 1:3,stabilizer.color-protecting citric acid content is 0.3 g,leaching temperature 80 ?,the leaching time of 1.0 h.Under these conditions,can guarantee beverage flavor,taste,colour and lustre is conform to the requirements of the national standard,the ginger juice was made by the soluble solids content 1.0%,reducing sugar content of 0.33 g / 100 ml,total acid content is 2.0608 g/kg,21.84% light transmittance.The best combination of ginger juice jujube formula is: ginger juice: 18 ml / 100 ml,water: 22 ml / 100 ml,citric acid,0.15 g / 100 ml,red jujube juice: 60 ml / 100 ml,cane sugar,5 g / 100 ml,the ginger juice jujube drink dark yellow,translucent and uniform composure,sweet-sour appropriate,both ginger and jujube unique color,flavor,the comprehensive evaluation score of 85.70.Among them,the content of soluble solids was 9.1%,total acid content was 2.513 g/kg,and the transmittance was 48.80%.The best combination of ginger juice and honey formula is: ginger juice: 14 ml / 100 ml,water: 78 ml / 100 ml,honey: 8ml / 100 ml,citric acid: 0.15 g / 100 ml.According to this formula was ginger honey drink orange bright color,pale yellow,uniform and no precipitation,sweet-sour appropriate,ginger and honey,unique flavor,the comprehensive evaluation score of 83.90.The content of soluble solids was 9.1% and the total acid content was 7.241 g/kg,and the transmittance was 26.05%.The best combination of ginger tea black tea is: ginger juice: 15 ml / 100 ml,water: 35 ml / 100 ml,citric acid: 0.15 g / 100 ml,black tea: 50 ml / 100 ml,sucrose: 4.5 g / 100 ml.According to the formula of ginger juice drink black tea color,sweet and sour,reddish brown,calm no precipitation distribution and appropriate,with ginger and black tea color,flavor,the comprehensive evaluation score of 86.75.The content of soluble solids in drink was 5.4%,and the total acid content was 1.727 g/kg,and the transmittance was 30.11%.According to the ginger and the quality characteristics of compound beverage made a series of packaging design,the four kinds of drink bottles were used respectively,list boxes,gift boxes,and other forms of packaging.
