Wine is one of the most widely consumed beverages in the world and has very long history as well as social importance.Although it is not the substances essential for human survival,has the close relationships with the development of human civilization and complicated process of society;In general,the study of ancient wine and related material remains can hardly do without wine residue analysis.As we all know wine is volatile,it is difficult to obtain samples in unearthed from archaeological excavations.However,the significant number of ancient containers was discovered,because of a lack of mature analysis method for residue,the function of these utensils are difficult to confirm.Therefore,developing a rapid,effective and relatively simple analytical method to solve the identification and recognition of wine residue is very necessary.In this study,developed a simple and rapid method based on Fourier Transform Infrared Spectroscopy(FTIR)combined with mathematical statistics modeling to identify wine residue in different archaeological samples;then,analysis polyphenols of suspected ancient wine or wine residue by the liquid-mass spectrometry analysis,the results make further judgment with FTIR analysis,There are two main conclusion:(1)The discriminant model was built up by combining IR spectrum with Fisher discriminant analysis.The results showed that the prediction made by this model was high accuracy,which not only can distinguish different liquid,but also identify different kinds of wine residues accurately.The method made significant progress for identify the wine residue which excavated from archaeological sites,furthermore,it also made foundation for studying the genealogy of the ancient wine and the development of the brewing techniques(2)Through analyzing chemical composition of the wine in itself,the results shows that polyphenols may remain in ancient wine for a long time,which can be used as identified components of wine residues.The HPLC-MS analysis method was obtained for identification of polyphenols in wine residue at same time.This study provides a new method and perspective for the archaeology in ancient wine research,and laid a solid foundation for the further protection in related materials remains.
