Sweet Cherry is one of the main varieties of fruits that planted in Shaanxi province.Sweet cherry fruits has not only bright color,unique taste,but also very rich nutritional value.Sweet cherry has soft pulp,thin peel,juicy taste.Its harvest is listed in the May to July which is high-temperature season.It is perishable fruit,not easy to store and transport.After harvesting,if it is stored at room temperature,it’s easy to produce fruit stem drying,pulp browning,decay and fruit flavor fading.The fruit quality of sweet cherry fruit is mainly affected by the release of ethylene,the action of respiration,the enzyme in the fruit and the nutrient composition of the pulp,and the fruit browning and the softening of the fruit during the storage process.The main storage methods in production include refrigeration,gas-storage,vacuum preservation,and chemical preservation.The research on sweet cherry storage has been very fast since 21 st century,but it has not been used well in actual production.The method of vacuum preservation needs large investment,and the chemical preservation method would have toxic residues affecting human health.At present,the common refrigeration method is the most widely used in actual production,but it is easy to produce pericarp browning and decrease the glossiness of fruit after the fruit is out of the storehouse.It is necessary to develop and popularize the technical standard of storage and preservation according to the technology of storage and preservation.Although the domestic and foreign experts on the sweet cherry different storage technology methods have been relatively perfect,but at present,there is only one storage and preservation of sweet cherry Storage technical regulations of the industry standards,for the variety of limited,and is not now the main planting varieties in Shaanxi and generally marketed.The scope of promotion is limited and the promotion of the strength is not enough,so a suitable for the Shaanxi region and can be promoted strong sweet cherry storage standards is lack of.It is of great practical significance to study the technical standard of sweet cherry postharvest storage and preservation in Shaanxi Province to promote the convenient and feasible storage technology of sweet cherry,prolong the sale time of middle and late maturing varieties and promote the development of cherry processing industry in Shaanxi Province.This study determined the key point of the technical standard of sweet cherry storage and preservation in Shaanxi Province,and after constructing the standards framework,the paper investigated the present situation of sweet cherry storage and preservation in the main sweet cherry producing areas in Shaanxi by studying the different storage techniques of sweet cherry.According to the comparative analysis of different methods of storage and preservation,combined with literature analysis and interview investigation,this paper chose the storage technology of sweet cherry,which is suitable for the extension of Shaanxi region,and then made the technical standard of storage and fresh-keeping of sweet cherry in Shaanxi Province.The standard includes refrigeration method,natural oxygen-lowering method and storage technology and other storage technologies.It has complete content,clear operation method,strong generalization and concise language,which is easy to understand and apply.The technical standard of sweet cherry storage in Shaanxi Province is a local standard,which belongs to the production system of sweet cherry in Shaanxi province,but the whole system is imperfect and needs to be developed and completed.
