As a high quality oil,soybean oil has much more nutritive value for human beings,which can provide enough energy and essential fatty acid for people in our daily life.And it make the food delicious,so soybean oil is popular for customers.Nowaday,China had been carrying out the policy of reformation and opening,which promotes the development of our country's economy,people also pay more attention to high quality life.With the improving realization of healthy and resources comprehensive utilization,people focus on the quality of oil,because it is related to our healthy.Many study showed the results that:oil obtained by organic solvent extraction contain a little of organic solvent,and eating this oil for a long time will have a negative effect to our healthy.so people start paying attention to cold pressed soybean oil.More and more customers choose cold pressed soybean oil for food,which provide a huge space for its development.The cold extraction of oil by enzymatic method has changed the traditional technology,simplified the operation unit,and realized the simultaneous acquisition of high quality oil and low denatured cake.This experiment through high-quality soybeans,peeling,crushing and sieving,regulating water,adding alkaline protease and cellulase,cold pressing process experiments were carried out on production of enzymatic cold pressed soybean oil,soybean crushing in addition of alkaline protease and cellulase synchronous degradation of soybean cellulose reached breaking,the soybean oil in cells the rapid outflow of cold pressed soybean oil,improve oil yield,achieved enzymatic cold pressed soybean oil preparation new technology parameters,the index of soluble protein content of soybean meal and soybean oil is measured.In this paper,the processing technology of soybean oil production by enzymatic hydrolysis was studied:(1)enzymatic cold pressing oil production process,firstly,soybean processed,dry and peeling of crushing and sieving,measuring moisture,test residual oil from cold pressed cake to calculate the rate of enzymatic cold pressed oil yield,the oil yield as the index,the single factor experiment of soybean crushing respectively the different standard screen to find better soybean raw material particle size,the particle size of the raw materials of soybean were determined for 40 standard sieve;through single factor test pressing water to find good pressing water,determined pressing water for 14%.(2)study on enzymatic cold pressing process,the oil yield as index,single factor experimenwas carried out to determine the amount of cellulase,the activity of 15966U/g was added to 15U/g after cellulase;single factor experiment was carried out to add amount of alkalin protease,determine the amount of alkaline protease activity was 166824U/g is 250U/g;so to determine the proportion of alkaline protease and cellulase was 2:1.Test and determination of the pressing enzyme(alkaline protease,cellulase =2:1)single factor experiment added to find good enzyme dosage,the enzyme(alkaline protease,cellulase =2:1)addition was 0.2%,and the cold pressed when the barrel temperature and screw speed were made single factor experiment of enzymatic cold pressing,determine the enzyme(alkaline protease,cellulase =2:1)the optimum adding amount was 0.2%,the cold pressed sleeve when the temperature is 190 DEG C,the screw speed was 36r/min.(3)by cold pressing method after enzyme treatment,cold pressed oil oil rate reached 70.6%,compared with and without enzyme treatment,oil extraction rate increased by 6-11 percentage points,obtained without oil refining,achieve three national standards for edible oil,pressed cake protein NSI value reached 39.4%,oil proof after the meal protein still has good characteristics of processing.
