The nutrients(amino acids?vitamins?fatty acids?trace elements)are analyzed in koumiss samples gathering from the xilingol area in Inner Mongolia in this paper,and lactic acid bacteria were isolated and identified by traditional method,and then detected the contaminant microorganism with some potential risk of safety by the plate count,the main results were as follows:(1)The determination results of chemical composition in 17 koumiss samples is:The amino acids contents are 1.21?1.89(An average of 1.62±0.20)mg/100mg,the fatty acid contents are 3.30?4.26(An average of 3.65±0.14)%,the vitamin A contents are 1.57?9.21(An average of 4.75±2.73)?g/100g,the vitamin E contents are 15.12?600.1(An average of 151.86±158.80),g/100g,the vitamin C contents are 3.07?6.23(An average of 4.55±1.05)?g/100g,the vitamin B1 contents are 5.14?31.62(An average of 9.92±7.41)?g/100g,the vitamin B2 contents are 0.84?3.03(An average of 1.88±0.81)?g/100g.The trace elements in 17 samples such as Ca,P,Mg,Zn,Fe,Cu and other elements,the K contents are 340.6?603.4(An average of 480.5±84.01)mg/kg,the Na contents are 62.02?235.1(An average of 113.70±39.70)mg/kg,the Ca contents are 395.3?855.5(An average of 624.06±142.44)mg/kg,the Mg contents are 30.29?62.59(An average of 45.16±11.08)mg/kg,the P contents are 27.99?50.44(An average of 39.66±7.10)mg/kg,the five kinds mentioned above are relatively high,and the Ca\P is close to 2:1,other trace elements such as Cu,Fe,Mn,Zn,Se are relatively low.(2)The 53 strains of LAB were isolated.16 strains of lactobacillus,36 strains of lactococcus,1 strains of B.psychraerophilum,all these strains were identified as:4 strains of L.kefiranofaciens,3 strains of L.casei,2 strains of L.paracasei,6 strains of L.plantarum,and 1 strains of L.helveticus,1 strains of B.psychraerophilum,2 strains of Leu.mesenteroides,3 strains of Leu.mesenteroides subsp.mesenteroides,2 strains of Leu.pseudomesenteroides,4 strains of Lac.garvieae,7 strains of E.faecium,14 strains of E.durans,1 strains of Efaecalis.E.durans were the predominant species in these samples.(3)The total amount of bacteria and harmful microbial counts of 17 koumiss samples was measured through plate counting,the total number of bacteria are more than samples was measured through plate counting,the total number of bacteria are more than 106cfu/ml in the sample SM4,SMN2,SMN3,SMN4,SMN9,other samples are within 106cfu/ml;Staphylococcus was detected in 5 samples,in the sample SMN3,SMN11 have 105cfu/ml;E.coli was checked out in 6 samples and in the sample SMN3,SMN9 have more than 104cfu/ml;Salmonella was detected in 4 samples,have 104cfu/ml;Clostridium perfringens had been detected in the sample SMN3,SMN7,the counts reached 103cfu/ml;Bacillus subtilis in sample SMN9 was checked out,the counts reached 103cfu/ml,the remaining samples has not been checked out.So a certain degree of pollution in individual samples can be confirmed.The reason may be farm environment,factory processing conditions and environmental factors,climate factors,drag-in by human and so on.Completion of this paper will research nutrition component and content of the composition,beneficial and harmful microbial species and content in traditional fermented koumiss,it can conduct a comprehensive and objective evaluation,and provide basic data for widely using and security evaluating.
