| Commonly known as corn,corn is annual gramineae herb,is also one of the world’s top food crops.After the extraction of starch by-product of corn protein solubility in water is poor,is an important factor to limit the comprehensive utilization of corn protein,and corn protein powder of several kinds of human body essential amino acid,so used to feed without being as edible,and the corn protein powder by the enzyme hydrolysis polypeptide has a variety of physiological activity,can be used in medicine or health food.In this paper,the innovative developed a pretreatment technology of corn protein powder,corn protein powder by high temperature cooking,increase the efficiency of the hydrolysis of corn protein powder,according to the main influencing factor of the alkaline protease hydrolyzing corn gluten powder substrate concentration,enzyme concentration,temperature and pH conditions optimized test,the alkaline protease hydrolyzing corn protein powder is obtained the best craft: the initial substrate concentration of 7.5 mg/mL,0.5 μ/mL,enzyme concentration temperature 45 ℃,p H9.0,under this condition,protein conversion quantity is 2.214 mg/mL,protein conversion rate is 25.60%.Corn protein hydrolysate by using different intercept molecular weight of ultrafiltration membrane filtering,soluble polypeptide recovery and desalting rate calculation,finally selected intercept molecular weight of 1000 daltons ultrafiltration membrane of corn protein hydrolysate desalination processing,vacuum concentration,spray drying,the ash content is less than 5% of the corn active peptides. |
