Biogenic amines are common in various tissues of animals and plants,is an important physiological active components of organisms.Biogenic amines mainly in body growth process plays a physiological role in different physiological processes,including in synthesizing cells maintain the stability of cell membrane and regulate the synthesis of nucleic acid and protein in cells and involved in fruit development and the aging process and.Tea is the first of the world's three-largest beverage,and its chemical composition has attracted much attention.The detection methods of biogenic amines have been reported in many kinds of fermented foods,alcoholic beverages,aquatic products and meat,but there are few studies on the detection methods of biogenic amines in tea.This experiment established the UPLC-UV detection method for the determination of seven biogenic amines in tea,and get the following results:1.This study from benzoyl chloride as derivatization reagent,using ultra performance liquid chromatography(UPLC)-UV detection method,founded the method for the determination of biogenic amines in tea.Using this method,the separation effect of biogenic amines was better,the linear relationship of the biogenic amines was good,and the correlation coefficient was more than 0.990.Using HC104 0.4M solution as extraction solvent,the extraction and purification of biogenic amines in tea were extracted and purified.The average recovery rate of biogenic amines was between 72.3%?94.5%,the precision and reproducibility were less than 5%,and the method was feasible and effective.2.In addition to white tea,the other 5 kinds of tea samples can detect 7 kinds of biogenic amines Low content of biogenic amines in tea,but different kinds of biogenic amines content difference Tea more content of biogenic amines are putrescine,spermine,spermidine tryptamine and tyramine,which tea putrescine and tyramine content were the highest,1.19?g/g and 2.142?g/g;green tea spermine,spermidine amine,tryptamine,phenylethylamine content are very high,respectively 4.13?g/g,2.90?g/g,1.16?g/g and 2.53?g/g;the content of biogenic amines in white tea lowest putrescine,cadaverine and spermidine amine were detected.3.The experiment using the same raw materials and processed into six kinds of tea samples,on the basis of the same raw materials,effects of comparison of different processing methods on the content changes of major biochemical components,so that a true reflection of the chemical essence of different kinds of tea quality,have the comparability.The results showed that there were significant differences in biogenic amines among different kinds of tea samples,which indicated that the process was an important factor in the change of biogenic amines content in tea.
