Fenugreek, department of leguminous plants,mainly used for drugs and glue, its utilization is about 30%, the remaining 70% component contains abundant flavonoids and polysaccharide and protein, etc. At present, few research is studied on extraction process and application study of active ingredient in stripping fenugreek residue.In this paper, the stripping fenugreek residue of fatty acids, flavones, polysaccharide and protein were studied. According to the different nature of all kinds of ingredients, using different methods to extract, finding the appropriate test method to carry on the qualitative and quantitative analysis, to determine the best extraction technology conditions, studying on performance of polysaccharide and protein, as cosmetics additive, this is a new approach for the comprehensive utilization of fenugreek residue glue.With petroleum ether as solvent, extracting fatty acids from fenugreek seed, using the GC-MS to test the type and relative percentage content. The results are as follows: there are 12 sorts saturated fatty acid,which is given priority to with palmitic acid and stearic acid;there are 8 sorts unsaturated fatty acid,Among them is given priority to with linoleic acid,accounting for 48. 15% of the total amount of fatty acids.With ethanol as solvent, fenugreek flavone is extracted, Single factor experiment and orthogonal experiment was carried out to determine the best process, the optimal extraction conditions are as follows: temperature of 80?, time of 1h,ethanol content of 80% and ratio of liquid to solid of 20: 1, In these conditions, the content of flavonoids in the extracts is 0.42%.Using enzymatic extraction to extract fenugreek polysaccharide, on the basis of single factor experiment, using the Design - Expert 8.05 b to optimize process conditions, the optimal extraction conditions are as follows: buffer solution pH = 5.5, temperature of 35?,enzyme amount 0.4%, time of 1.5h and ratio of liquid to solid of 20: I, In these conditions,the content of flavonoids in the extracts is 36.42%.Using Papaya protein enzymatic extraction to extract fenugreek protein,on the basis of single factor experiment, using the Design - Expert 8. 05 b to optimize process conditions,the optimal extraction conditions are as follows: buffer solution pH = 7,temperature of 45?, enzyme amount 0.3%, time of 2h and ratio of liquid to solid of 25: 1,In these conditions, the content of flavonoids in the extracts is 14.76%.The vitro antioxdant activity , hygroscopicity and moisturizing performance of polysaccharide and protein from fenugreek was evaluated by the determination of scavenging ratio and determination of absorption rate and moisturizing rate and its application in microemulsion mask. Result showed that polysaccharide and protein from fenugreek display good antioxdant activity, bsorption and moisture retention , adding polysaccharide and protein from fenugreek into cleanser and microemulsion mask , the sensory indices physical-chemical indices of the product obtained from the quality detection tests are in line with the nation standards.
